Dar Ward’s Easy Stovetop Baba Ghanoush


Baba Ghanoush

Serves 4


  • 1 kg eggplant
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 4 medium tomatoes, chopped
  • 2 garlic cloves, minced
  • A small batch of parsley, chopped
  • ½ tsp cumin
  • Salt to taste
  • Olive oil for garnish


Over medium heat, place eggplants with skins in a pan for 10-20 minutes until softened. Remove and peel by hand, then mash. Add chopped peppers, tomatoes, garlic, cumin, salt, and parsley and blend using hand mixer. Garnish with olive oil and chopped walnuts, if preferred.
