Angie’s Place: Carrot and Ginger Soup

It’s time for a winter warmer, and that means a great soup recipe! The brains behind Angie’s Place supplied us with a quick and easy recipe for a healthy, hearty soup – give it a try and let us know what you think!

Ingredients:
800 g carrot, sliced
90 g onion, sliced
80 g leek, sliced
60 g celery, chopped
100 g ginger, mashed
5 g heavy cream
2.5 litre water
Vegetable stock cube
Salt and pepper to taste

Preparation:
Sauté onion in butter then add the rest of the ingredients except for the cream. Once vegetables are tender, let cool then mix in the blender. Return to pot, add cream, salt and pepper to taste.
