Ahmed Mourad talks 1919’s Upcoming Film

Ahmed Mourad

By Mai Omar and Zainab AbdulAziz

One of Egypt’s best-selling authors and the genius behind the spectacular world of Blue Elephant has taken us on a wondrous ride of dreams, parallel universes, and spiritual presences. We sat down with Ahmed Mourad to pick his brains about the upcoming movie adaptation of his hit novel 1919 starring Ahmed Ezz and Karim Abdelaziz and the complex levels of the writing journey.

Why did you choose the setting 1919 for your book?

The most incredible thing about reading is to visit a world you’ve never been to before. Traveling to a different time has its unique luster. It’s fascinating to read about things that happened in an era which we did not live. We need to escape our reality sometimes and experience different lives and circumstances, and that’s what gives art its drive.

That’s why historical movies have such an amazing resonation with the audience, because they get to meet characters we could never meet otherwise. The events that took place in our country during the year 1919 will never happen again, we were colonized by the world’s biggest empire at the time, Great Britain, for 72 years. The resistance happened from the Egyptian people towards this great army. It’s an era missing in Egyptian cinema which we need to see and enjoy.

Is there a key message or a theme you’d like to deliver to the Egyptian youth?

Time. My message to the youth is that you’re wasting precious gold by wasting time. Why realize this late when we can realize it early and gain all this fortune? Energy and time can move mountains.

How much time do you spend on research when writing your books?

The process takes from 2 to 6 months, but I never wait to finalize the research before writing. If I waited for this moment I would never start! When I visualize the world I’ll write about, I begin my writing journey. The research continues throughout the entire process until I submit the manuscript to the print house, or the script to the producers.

Do you find it difficult writing about the opposite sex?

Not at all! It’s surely challenging, but I find it very thrilling. One must walk a mile in a women’s shoes to understand her.

You have successfully adapted your novels to scripts before, what is the process like taking your stories from the page to the screen?

The process begins by me reading the novel excessively. Maybe twice. I insert the most important events and then develop cinematic aspects which build the scenes.

The most important step completely disregarding the fact that I am the author of the novel. I have to become more biased towards cinematography standards. I dissect the novel and reassemble it according to a new vision for the screen.

This is a nice challenge for me because I am able to give the reader and non-reader something new; I get to include new events and visions which I didn’t have the chance to include initially. It’s like redecorating a house full of pillars, they have to remain untouched but I must refurbish the house to look better and newer.

How hands-on are you with helping actors and actresses play the characters from your books? Any stories to share from the set of Torab el Mass or Blue Elephant?

After Marwan and I finish our script work, we meet with the actor/actress and begin talking to them about the character’s background, basically what came before movie. Then we start addressing their questions, fears, and concerns.

The second stage is the table read; it’s when all the actors, actresses, scriptwriter, and director gather around and read the entire movie. This gives everyone an idea about all the characters in the movie. This is one of the most amusing stages in the process.

Hend Sabri was having doubts about her character and how she was going to approach such a complex character. Marwan Hamed’s comment to her was “it’s not about how you’re going to get in character, it’s about how you’re going to get out of character” It was a memorable funny comment through the entire shooting, and it was based off Khaled ElSawi’s experience during the first installment of the movie … he had a hard time breaking character.

What is it like watching your stories come to life on the big screen for the first time and hearing the response from the audience? Are you ever disappointed by a lack of detail or backstory, or wished you’d gone in a different direction?

It’s an indescribable feeling! I get first row tickets to the movie and halfway through, I like to watch the audience reactions. I could have seen the movie 20 times already by that point, but it’s a euphoric feeling to just watch the audience. I predict when they’ll laugh, be surprised, all their impressions! People laughed when they saw the black dog during Blue Elephant, and that worried me. Turns out, it was nervous laughter and they were calming their fears, because the horror factor took over like expected.

The experience is helpful to a great extent. I never had to go in another direction because the movie is well-researched and planned before we even begin shooting. Overall, it’s an incredible cocaine-like feeling.

There’s a lot of buzz about the upcoming adaption of 1919 starring Ahmed Ezz and Karim AbdulAziz. What can devoted fans of your books expect from this movie?

1919 will be called “Keera Wal Gen”; the names of the lead characters in the book. There are great innovations to the script, a lot of changes and surprises. There will be many helpful details to view Egypt in this troubling time because it’s an action movie taking place in the 1920s. I really hope it’ll be more enjoyable than the novel. I hope the readers of the novel really enjoy these additions.

Behind the Scenes with Omar Samra and Omar Nour from Beyond the Raging Sea

Conducted by Zainab AbdulAziz

Written by Mariam Elhamy

“That’s what this documentary is about … it’s a comedy of errors,” says Omar Nour. He is referring to Beyond the Raging Sea, the nail-biting film produced and directed by Marco Orsini, which retells the experience of capsizing at sea with Nour’s mate Omar Samra during their daring attempt to cross the Atlantic Ocean in an effort to support the cause of refugees. We met up with the heroes right after the film premiered at the third edition of El Gouna Film Festival to learn how the horrific experience shaped their worldview and how the idea for the documentary took shape.

What had you set out to do when your boat capsized?

O.S: Well, we never set out to make a film!

O.N.: … And we never set out to capsize either! (laughs)

O.S.: We set out to cross the Atlantic Ocean, 3,000 nautical miles from the Canary Islands to the Caribbean – an extraordinary journey to raise awareness for a very important cause, the plight of refugees. It is the biggest crisis facing humanity today. I’m a former United Nations Development Programme Goodwill Ambassador, so I reached out to the United Nations High Commissioner for Refugees and decided we’re going to undertake this mission for the refugees.

Thirteen hours after setting off, we ended up in a similar experience to refugees fleeing across the open water. Despite the fact that we almost lost our lives several times, it was still very different from what refugees face. We, unlike them, have a choice, and the best equipment and training afforded to us. After we were saved and back with our families, we could only imagine the level of desperation someone must have to attempt such a journey. We came back even more invested in the cause and connected to it.

What was the moment everything went wrong?

O.N.: There wasn’t one moment, there were several! Our whole day was an emotional rollercoaster. We capsized right before sunrise and there were two thoughts that ran in my mind, the first was “No, no, no! Not like this!”, meaning I didn’t want the mission to end like this, and the second thought was I didn’t want to die like this! Things just kept going wrong: the life raft didn’t inflate, the emergency beacon didn’t fire, the water was cold, the boat didn’t self-right, the waves were eight to ten meters high, winds clocked 80 km per hour, and we happened to be in great white shark hunting territory!

Even after we saw the ship that rescued us and thought we were saved, the process of getting up on the boat was complete insanity and the fear went from, “We’re going to die from hypothermia in a few hours,” to “we’re going to get flung from the ship and die in 10 seconds!” The only time I felt that we were truly safe was when we were on board the ship.

You mentioned finding humor in even the darkest moments, tell us a bit about that.

O.S.: If we had verbalized what we were really thinking, it would have been doom or gloom, so we tried to make light of the situation. When we saw the huge ship named Catalonia, Omar started talking about how he loves Greek food and how within half an hour we’ll be eating that. Omar detailed how he was going to take me to Abou El Sid for dinner when we got home, and even listed every single item he would order. (laughs)

O.N.: And I delivered!! (laughs)

How did the film come about?

O.S.: When I came back, I was invited to the UNHCR office to recount the story in detail, and director Marco Orsini happened to be there at the time and decided he wanted to make a documentary based on what happened to us

O.N.: Marco is a genius! He had very little footage to work with and had to recreate the story while dealing with two big personalities that lived a very personal story. We still believe that it should have been a 13-hour film, by the way!

How did it feel watching the film after it was made?

O.N.: Reliving everything that happened to us with my mother sitting right behind me and my girlfriend next to me was a very personal and emotional experience, because those two ladies went through hell and back and I got to see everything from their perspective while watching the film because Marco interviewed them in it. It felt very special to hear everyone saying so many good things about our film, our story and how it was put together. I’m proud!

Say Goodbye to Winter Weight Gain

Why is it that as soon as temperatures plummet our food cravings seem to skyrocket? Everything we can easily ignore during the heat of summer suddenly becomes essential to our very existence. Yes, we are talking about sugary snacks, hot chocolate and carb-laden cookies. Add to that the festive season upon us. Helping us get on track before things get out of hand is leading nutritionist, health coach and certified health professional Noura Hassaballa.

Causes of packing on extra weight in winter

In a nutshell, in winter your body burns more calories in order to keep you warm. If you are eating ‘healthy’ you should actually lose weight as when your body is exposed to cold it releases more heat to keep you warm. But it is so tempting to make wrong food choices in order to keep warm.

Best comfort food choices to make in winter

Traditionally we have turned to hot drinks like sahlab, which should really be avoided, as it is loaded with starch and sugar. Soups are a much better option for winter, but the secret is to make sure that they are non-creamy, and low in fat and carbohydrates. Go for healthy choices like lentil, pumpkin and other vegetable soups, and casseroles with chickpeas or sweet potatoes.

How can you manage your carb cravings?

It is important to eat small, regular meals and drink plenty of water. It is easy to overlook this point when temperatures cool, but even if you are not thirsty it is a good idea to regularly have healthy caffeine-free hot drinks like chamomile or mint tea. It should be noted that green tea actually contains more caffeine than regular tea.

Avoid adding on kilos with these simple steps:

  • Work out!
  • Make healthy food choices
  • Start meals with soup in winter, as salads are cooling and tend to weaken the immune system.

Stay in shape with these healthy, non-fattening food swaps:

Rather than turning to simple carbohydrates, fried foods and processed snack products, go for proteins, complex carbohydrates and vegetables. Proteins keep you feeling full; vegetables are high in fiber, especially leafy green varieties, and broccoli and asparagus. Boiled sweet potatoes, legumes, lentils, quinoa and buckwheat are filling and a slow-burning fuel for your body as well.

What is the best time of day to eat complex carbs?

There is no ‘best’ time of day. It really depends on your lifestyle and level of activity. You need complex carbs before you work out, either morning or evening, but people with a sedentary or less active lifestyle should consume their main carbs earlier in the day rather than having them late at night.

Foods you should include regularly in your winter diet:

As mentioned, you need a good balance of proteins, vegetables and complex carbohydrates like legumes and fruit. Vitamin C is important, with guavas being an excellent source, along with citrus fruit and kiwifruit. Pomegranate is excellent for helping with circulation as well, important in colder weather.

5 Top Tips for healthy eating over the festive season.

  1. It is so easy to go overboard with all the food temptations at parties and gatherings, so try to snack on small meals throughout the day. Then when you eat in the evening it will be easier to restrict yourself to a small plate with a balance of 50% vegetables, 25% protein and 25% carbohydrates.
  2. If there are a lot of intriguing dishes, allow yourself a tablespoon of each, and don’t go back for seconds!
  3. Don’t load up on juices or other sugary beverages; keep a small bottle or glass of water handy throughout the evening.
  4. Never eat until you feel 100% full, 80% is about right, so stop when you feel you have reached that point.
  5. Social gatherings are not just about food. They provide a wonderful opportunity to catch up with family and old friends, and are a chance to meet new people. Enjoy conversations and take a break from your plate. Doing this will give your body time to realize that there is enough food to digest in your stomach and that you don’t actually need to eat more.

Estro Rooftop Ristro-Bar in Maadi

By Zainab AbdulAziz

He hit the jackpot with Frank & Co, so owner Frank teamed up with Enrica D’Errico to launch an authentic Italian restaurant with a heavy Sicilian influence. Most of the recipes are from D’Errico’s childhood kitchen, paired with the homey and relaxed atmosphere of a stylish, modern neighborhood eatery. You’ll find simple, health conscious, homemade food with none of the heavy side effects that usually result from an Italian meal in Cairo. Probably because there is virtually no butter or cream used in the dishes! Imagine that?

Signature Dishes

Bruschetta, Parmigiana di melanzane (baked eggplant with tomato and parmesan), Carpaccio di branzino (seabass carpaccio), Arancini al ragu (risotto balls with ragout), Insalata di zucchini (zucchini and parmesan salad), Insalata di rapa rossa (beetroot salad), Spaghetti al pesto Trapanese (tomato pesto), Ravioli di magro (spinach and ricotta), Tagliatelle al ragu, Seppie alla griglia con pure di piselli (grilled calamari in anchovy-caper oil), Pollo alla cacciatora (roasted chicken in a stew), and Cannoli Siciliani.

Dishes Sampled

If you’re a drinker, the Aperitivo menu is highly recommended to prime your belly for the meal ahead and Estro has several delicious options. We sampled the Peach Spritz and the Hugo, the servings are generous.

We kicked off the meal with a sampling of Estro’s wonderful antipasti: Parmigiana di melanzane, Bruschetta al pomodoro, the Caponata alla Siciliana, and the Arancini al ragu.

The baked eggplant parmigiana was delightful and enough to split three ways, perfectly flavored melt in your mouth goodness with chunky rustic bread. We couldn’t get enough of the garlic-laden tomato bruschetta mix, served in a bowl so the bread doesn’t get soggy. The caponata is divine, a stew comprising of roasted peppers, green olives, pine nuts, eggplant, and onion. Paired with chunky bread, you’re advised not to eat alone or you’ll fill up fast. The risotto balls are not oily at all and delicious, but we were too blown away by the caponata to truly appreciate them. Finally, the zucchini salad offered a necessary balance of fresh and crunchy greens with zest and shards of parmesan.

Rolling onto the pasta course, we selected the Tagliatelle al ragu from the 12 choices available. The rich and flavorsome slow cooked sauce with hand-chopped beef fillet comes served on al dente thick noodles. Enjoying a proper ragu is a treat, but it can be quite filling, so we highly recommend splitting a portion before venturing onto the main course.

For the main courses, we went for the signature dishes: Pollo alla cacciatora and the Seppie alla griglia con pure di piselli. The roasted chicken stew was comprised of tender chunks of roasted chicken cooked in vegetables, tomatoes, and olives. This is a very hearty dish, perfect for chilly winter evenings, and with more than enough of stew to dunk your bread in. The grilled calamari is lightly cooked in anchovy and caper oil, and served with a delightful portion of puréed peas. The calamari was a tiny bit tough to the bite, but the flavor was very delicious and the peas were a perfect companion. We would probably go for a safer choice on future visits.

Other Menu Items that Appealed

Everything! We will slowly work our way through the entire menu over time. There is a panini menu available daily from 12 pm to 6 pm for those in need of a quick delicious lunch.

Beverages Available

A full bar; aperitifs, cocktails, beer, wine. Coffee and soft beverages are also available.

Décor and Ambience

Chic, elegant interiors and mood lighting combine to make this the perfect place for date night. Both indoor and outdoor seating is available, with a terrace that overlooks the treetops of Maadi. A small bar offers sparse seating for those after a quick drink and appetizers. There are limited tabletops here, and the place is packed when we visited on a Wednesday, so reservations are highly recommended.

Clientele Mix: 30-somethings enjoying a date, and small groups of friends over 25 catching up over drinks. Definitely a more adult spot.

Price Range: Average and reasonable considering the quality of the meal.

U Palm by U Bistro at Palm Hills

Sitting above Fresh Food Market at Palm Hills is the latest addition to west Cairo’s burgeoning fine dining scene, U Palm by U Bistro. A short elevator ride up to the third floor and you are instantaneously teleported into the belly of edgy sophistication. That’s the best way we can put it. A design forged in the mind of gifted architectural designer Karim Mekhtigian of Alchemy Design Studio. U Palm proved to be a thrilling excursion not only for our palates, but for all our senses. We were Alice, and this was a culinary Wonderland.

Dishes Sampled

The food experience is a compelling journey told through one man’s thrilling culinary imagination, with a diverse career spanning three continents, Chef Irfan hailing from Malaysia has ingeniously concocted a precise menu that excites on all fronts.

Leaving the ordering up to the gracious and supremely humble chef, we started with Chicken Yakatori, Beef Skewers, and Foie Gras Profiterole. All three delivered on taste, innovation, and presentation. Next came the Tuna Tataki, and melt-in-your mouth Pan Seared Scallops with a gallery-wall worthy presentation, followed by a flavor-packed Japanese Shrimp Salad. The Tuna Tataki fascinated with a vibrant taste-texture combination, while the beet-root crusted Foie Gras Profiterole was a fiery-red visual delight with a rich, creamy foie gras filling. “We try to be more than contemporary cuisine,” contends the chef, “we try to infuse flavors from Asia and the Mediterranean.”

Next came the Vietnamese inspired Fragrant Beef Broth with wafer-thin, delicate layers of beef cooked in the heat of the soup, and a Seafood Soup that was neither cream-based nor a bisque, but a refreshingly light, aromatic broth. Each with a distinct flavor profile that educated our taste buds anew.

Following the soup, our we refreshed our palates with a lemon sorbet, and were then treated to the Chef’s favorite Squid Ink Pasta, accompanied by marinated shrimp in a bisque sauce. Absolute perfection. Squid ink has a deep earthy flavor, almost nutty, and the Chef’s special shrimp marinade really elevated the whole dish to a paragon level. The final two mains we were regaled with were the Halibut and the Broiled Chicken Thighs. The Halibut is cooked using the sous vide technique, and sits on a bed of sweet-tasting, delightfully surprising fermented cabbage. The Broiled Chicken Thighs came with an uncomplicated, no-cream potato gratin that inspired in its simplicity.

Sipping on mastermind (alcoholic and non-alcoholic) cocktails engineered by mixologist Spiros hailing from Greece offered a respite between bites. Eager to catch our breath and committed to go all the way to the end, two desserts landed on our table. Indulgent and sinful, just the way we like it. An authentic French Mille Feuille to compete with the Parisian best, served with a cooling raspberry sorbet, and a rich Violet Cake made with a mix berries crème brulée, and almond and raspberry cream.

U Palm, we are in love.

Other Menu Options that Appealed & Beverages

Ribs Sliders, Zucchini Flowers, Mushroom Mille Feuille, Australian Lamb Rack, Chateaubriand, Duck Breast, and Mix Berries Cheesecake

A highly sophisticated roster of international spirits, liqueurs, aperitifs, digestifs, champagnes, wines, beers, and more are available. Local wine and beer, signature alcoholic and non-alcoholic cocktails, soft drinks.

Décor and Ambiance

U Palm is quite spacious, sleek, and sexy. A red statement wall stands as a backdrop to industrial lockers conveniently placed to house your winter coat. After all, who wants to mind their coat when they’re busy savoring delectable gourmand dishes and sipping on inventive cocktail creations. Warm neutral tones and blueish hues marry a modern urban flair with a high-end VIP vibe. Lush green plants bring the whole scene to life, adding a vibrant touch of nature against the sleek and elegant touch of man.

A long well-stocked bar, a glass-walled kitchen (with the sprawling main kitchen tucked away from your eyes), varied seating options, black mirrored glass ceilings and columns, metal chain chandeliers – you are not in suburbia anymore. Think of a 2019 Great Gatsby high-rollers exclusive club, less flamboyant, and more refined.

An entire side of U Palm is comprised of floor-to-ceiling windows covered in sheer drapes, sheltering you from the non-descript view, while giving you the feeling of a swanky sky-rise restaurant in a cosmopolitan city. During the day, the massive windows let in daylight that transforms the evening’s sexy vibe into a fresh and energized one.

Clientele Mix: West Cairo residents, businessmen, groups of 30 to 40 somethings, the see-and-be-seen crowd.

Price Range: High end.

Worth Noting: U Palm will be open for lunch starting this month. Reservations are a must. Ask to meet the chef if he’s there when you visit and not tending to the Zamalek U Bistro. Conversation with him is a delight!

Tabibi: Top Three Pitfalls of New Year’s Eve

Celebrating the beginning of a new year is an exciting time, but while partying and celebrating, it’s important to keep your safety in sight. Check out our top three pitfalls of New Year’s Eve.

  1. Playing with fire

On New Year’s Eve we love to light up our skies with fireworks. Yes, we admit, it’s fun to watch but it is dangerous too. Fireworks can cause death and injuries, including burns, contusions, lacerations, and foreign objects in the eyes. Make sure to have fun while keeping your family and yourself safe through these few rules.

  • It’s not for kids. Young children can suffer injuries from sparklers so, never allow kids to play with or ignite fireworks. Instead encourage them to watch firework displays from a safe distance.
  • Never carry fireworks in a pocket or shoot them off in metal or glass containers.
  • Light fireworks one at a time, then move back quickly.
  • Never, ever, point or throw fireworks at another person.
  • If it’s not ignited fully, don’t try to re-light it or to pick up it up.
  • Keep a bucket of water or a garden hose handy in case of fire or other mishaps.
  • After fireworks complete their burning, douse the spent device with plenty of water from a bucket or hose before discarding it to prevent a trash fire.

2. Festive gatherings

Take care! Large gatherings on New Year’s Eve are fun for viruses too. We get to spend more time indoors with the windows sealed, so are more likely to breathe the same air as someone who has the flu and thus contract the virus. Also, the influenza virus is happier and transmitted more in cold, dry weather. Make sure to keep a breath of fresh air in the room, keep hands washed frequently and get your flu vaccine.

3. Family fun

Don’t be a victim of extra stress, loneliness and sad reminders of lost loved ones over the holiday period. New Year celebrations can be the way to spend time with your whole extended family and friends. You will not be just reconnecting with others, but you will also get to disconnect from the routine of your busy life.
