Something Savory, Something Sweet: These healthy vegetable chips and chocolate chip oat cookies will be the perfect healthy snacks for your kids to take to school. Both recipes by Nour El Ganzoury at EAT-ducate.

Healthy Vegetable Chips

Ingredients:

Sweet potato and beetroot.

Preparation:

  1. Cut the well-scrubbed sweet potato and beetroot into fine slices and soak them in water with vinegar and salt for 30 minutes.
  2. Then place the sliced vegetables on a tray and brush them with olive oil, paprika, salt and pepper and then bake in a pre-heated oven on medium heat until they are golden and crispy.

Chocolate Chip Oat Cookies

Ingredients:

  • 1 egg
  • 1 1/4 cups oat flour
  • 5 full tbsp honey
  • 1/2 cup dark chocolate chips
  • 2 tbsp coconut oil
  • 2 vanilla sachets
  • Pinch salt
  • 1/2 tsp baking powder
  • 1/4 cup crushed walnuts
  • 3 tbsp almond milk

Preparation:

  1. Mix all ingredients together and place in the fridge for 30 minutes. Preheat oven to 380 degrees.
  2. Form small balls, place on baking sheet or greased tray and bake for 10 minutes. Let cool before storing in an airtight container.
