This is a dessert that the kids will love and that you will be happy to make for them. It’s got no processed sugar, full of healthy ingredients and it’s super easy to put together. Start with the banana Ice-cream, then on to the sweet potato peanut butter brownies, here’s how to make both. Banana Brownie Sundae

(1) Banana Ice-cream
Ingredients: Banana Brownie Sundae
For 5 scoops
- 2 big ripe bananas
- 2 vanilla sachets
- 6 tbsp honey
Preparation:
Peel bananas and place them in a container. Freeze for at least 6 hours. Then add vanilla, honey and blend, but keep it a little chunky. After blending, freeze again until ready for use.
(2) Sweet Potato Peanut Butter Brownies
Preheat oven to 180°. Banana Brownie Sundae
Ingredients:
- 1 1/2 cups baked sweet potato cubes
- 1/2 cup cocoa powder
- 1 egg, (vegan option: 1 flax seed egg)
- 1/2 cup unsweetened peanut butter
- 2 vanilla sachets
- 1/2 cup dark chocolate chips
- 2/3 cup oat flour
- 1 1/2 tsp baking powder
- 1/4 cup coconut oil
- 1/4 tsp salt
- 7 tbsp honey
Preparation: Banana Brownie Sundae
- Mix all of the ingredients, except the dark chocolate chips, in a bowl. Then fold in chocolate chips with a spatula. Keep some to sprinkle on top.
- Bake brownies in the oven for about 25 minutes.
