Salmon Mousse Crepe

For the crepe:

Ingredients:
– 1 cup of flour
– Pinch of salt
– Pinch of sugar
– 1 egg
– 1 & 1/4 cup of milk

Method:
1. Whisk all ingredients together until smooth, pass through a sieve if needed
2. On the stove over high heat, pour the crepe batter over a nonstick pan for 2 minutes, then flip over for 1 minute, transfer hot crepe on a plate and set aside (repeat until you finish the batter)

For the salmon mousse:

Ingredients:
– 200 g cold cream cheese
– 80-100 g smoked salmon
– 30-50 ml cold cooking cream
– 1 lemon zest

Method:
1. Put all ingredients in a food processor and beat on high speed until you get a silky paste of salmon mousse.

Lazy Quiche with Pepperoni

Ingredients:
– 6 sheets of filo pastry
– Melted butter
– 4 eggs
– 1 cup cream
– 200 g Gouda cheese cubes (or any type of cheese you like)
– 200 g Mozzarella cheese
– Drops of hot sauce (optional)
– Dried oregano (or any other herb you like)
– Salt and pepper to taste
– 150 g pepperoni (or any cold cuts you like)

Method:
1. Whisk cream and eggs together in a bowl
2. Add the salt, pepper, hot sauce, and dried oregano and mix
3. Add in the cheese and mix
4. Add in the pepperoni and set the mixture to the side
5. Line your baking tin with the filo pastry, brushing each layer with melted butter
6. Pour the filling mixture over the filo case and bake at 190 degrees for 25-35 minutes, or until firm and gold at the edges yet slightly wobbly from the center
7. Serve hot!

Caramel French Toast with Caramelized Bananas

Fresh toast:

Ingredients:
– 2 eggs
– 1/2 cup cream
– 1 cup milk
– 1/4 tsp cinnamon (optional)
– Pinch of salt
– 1 tsp sugar
– 1/2 tsp Vanilla extract
– Ripe bananas
– Sugar for caramelizing

Method:
1. Whisk the eggs, cream, milk, sugar, salt, cinnamon, and vanilla together until smooth
2. Soak the toast into the mixture for 15 seconds on each side
3. On a hot pan add butter and the soaked toast, cook on medium-high heat until dark golden from both sides

For the bananas:
1. Cut the bananas vertically
2. In a hot pan, sprinkle some sugar – once it melts, add the bananas and don’t stir
3. Once the sugar color changes to golden, add a spoon of butter to stop the sugar from over caramelizing
4. Flip the banana slices over until they become amber golden on both sides

For the caramel:
Ingredients:
– 1/4 cup milk
– 1 cup soft brown sugar
– 110 g butter
– Pinch of salt
– 1/2 tsp vanilla extract

Method:
1. Put all the ingredients together, keep stirring until the caramel comes to a boil
2. Cook it for 1-2 minutes while boiling
3. Turn off heat and let it cool down

Assembly:
1. Put the French toast, add the caramelized bananas, and pour the caramel sauce over
2. Serve hot!
