Kiwi Avocado Salad
The perfect summer salad for a light and fulfilling meal. Buy some fresh avocado and kiwi and whip this up in no time.
Ingredients:
- 5 kiwi, peeled and diced
- 2 spring onions, chopped
- 1 avocado, diced
- ½ cup chopped cilantro
- ¼ cup chopped red onion
- juice and zest of 1 to 2 limes (about 2 tablespoons of juice)
- 1 garlic clove, minced
- 1 jalapeño pepper, thinly sliced (optional)
- sea salt
Method:
- In a small bowl, combine kiwi, onions, avocado, cilantro, red onion, lime juice and zest, garlic, jalapeño, and generous pinches of sea salt.
- Season to taste with additional sea salt and/or lime juice.
Creamy Avocado Smoothie
Drinking an avocado smoothie is like floating on a cloud. It’s so creamy and smooth that it feels like you’re dreaming.
Ingredients:
- 1/2 cup cubed frozen pineapple
- 2 cups packed fresh spinach or 1 cup frozen spinach
- 1 ripe avocado
- 1 frozen banana
- 3/4 cup light coconut milk, canned or from a carton
- 3 tbsps fresh lime juice, plus 1/2 teaspoon zest
- 1 tsp maple syrup or honey
- sea salt
- 8 ice cubes
- 2 scoops vanilla protein powder, optional
Method:
- Combine the pineapple, spinach, avocado, banana, coconut milk, lime juice, maple syrup, salt, ice, and protein powder, in a blender. Blend until creamy.
- Taste and adjust the sweetness to your liking. If you prefer a sweeter smoothie, add more maple syrup or honey. If the consistency is too thick, add more coconut milk, and blend again.
Baked Avocado with Smoked Salmon & Eggs

Ingredients:
- 3 large avocados, halved lengthways and seed removed
- 6 small eggs, egg yolks and whites separated
- smoked salmon, 3 slices, cut into pieces
- chives, finely chopped to make 1 tbsp
- a pinch of cayenne pepper
- toasted dark rye bread or any preferred bread
Method:
- Heat the oven to 200C/fan 180C/gas 6. Cut a small slice off the skin-side of the avocado halves to stop them rolling then scoop out some of the middle, add a little salmon to each and then add the egg yolks.
- Beat the egg whites quickly, so it’s consistent and pour in avocados as much as you can. Grind over black pepper and bake for 10 minutes, or until the whites have set.
- Scatter over the chives and a pinch of cayenne. Serve with rye bread for dunking.
Halloumi Fajitas with Avocado
Fajitas are the best, this halloumi fajita is not only vegetarian friendly, but it’s also delicious and has avocado!
Ingredients:
- 2 x 225g blocks light halloumi, sliced into strips
- 2 tbsp olive oil
- 1 red onion, halved and sliced
- 2 mixed peppers, sliced
- 2 garlic cloves, crushed
- 2 tsp smoked paprika
- 1 tsp ground coriander
- 1 lime, juiced
- 8 small or 4 large tortilla wraps
- 1 avocado, stoned, peeled and sliced
- small handful of coriander leaves
- chilli sauce or sour cream, to serve (optional)
Method:
- Heat half the oil in a frying pan over medium heat, and fry the halloumi strips for a few minutes on each side until golden then remove. avocado recipes
- Heat the remaining oil in the pan over high heat, and fry the onion and peppers for 5 mins until just soft and starting to char. Add the garlic, paprika and coriander with some seasoning and cook for 1 min more. Pour in the lime juice and fried halloumi, and stir very gently so the halloumi doesn’t break.
- Warm the wraps and pile the halloumi filling into the warm wraps, with a few slices of avocado each, some coriander leaves, and spoonfuls of chilli sauce or soured cream.
Avocado Chips
What’s better than snacking on healthy chips made out of avocado? Dip these avocado chips in hummus, tahini, sour cream or even guacamole. Best part is: it’s keto diet-friendly. avocado recipes
Ingredients:
- 1 large ripe avocado
- 3/4 cup freshly grated Parmesan
- 1 tsp lemon juice
- 1/2 tsp garlic powder
- 1/2 tsp Italian seasoning
- Salt and freshly ground black pepper
Method:
- Preheat oven to 325° and line two baking sheets with parchment paper. In a bowl, mash avocado with a fork until smooth. Stir in Parmesan, lemon juice, garlic powder, Italian seasoning and salt and pepper.
- Place teaspoon-size scoops of mixture on baking sheet, leaving about 3 inches apart between each scoop. Flatten each scoop with the back of a spoon or measuring cup.
- Bake until crisp and golden, about 30 mins, then let cool and serve.
Avocado Mac & Cheese
Mac and cheese are just everybody’s favorite and what happens when we mix it with avocado? We get an amazing recipe!
Ingredients:
- 2 large avocados, peeled and pitted, plus more for garnish
- 2 tsp lemon juice
- 1/2 cup unsalted butter
- 1/2 cup all-purpose flour
- 2 cup whole milk
- Kosher salt and freshly ground black pepper
- 3 & 1/2 cups shredded white cheddar
- 1/2 cup freshly grated Parmesan
- 300g fusilli pasta, boiled
Method:
- Place avocados and lemon juice in a bowl then mash until smooth.
- In a large pot or saucepan, melt butter. Sprinkle in flour and cook until slightly golden, 2 to 3 mins. Pour in milk and whisk until combined. Season with salt and pepper. Let simmer until it starts to thicken, about 5 mins.
- Turn off heat and add mashed avocado and cheeses to pot. Whisk until smooth. Add pasta and stir until fully coated in cheese sauce. Season again with salt and pepper if needed. Top with chopped avocado and serve.
Chicken Avocado Burgers

Ingredients:
- 450g ground chicken
- 1 avocado, mashed
- 1/3 cup bread crumbs
- 1 clove garlic, minced
- 1 tbsp parsley, finely chopped
- 1 tsp crushed red pepper flakes
- kosher salt & freshly ground black pepper
- 1 tsp vegetable oil
- Burger buns, lettuce, sliced tomato, sliced red onion for serving
Method:
- In a large bowl, combine chicken with avocado, bread crumbs, garlic, parsley and red pepper flakes. Stir well to combine and season with salt and pepper.
- Form the mixture into 4 patties.
- In a large skillet over medium-high heat, heat vegetable oil. Place patties in the skillet and cook until golden brown on one side, 4 to 5 mins.
- Flip the patties, and cook another 3 to 5 mins until cooked through.
- Serve on a bun with lettuce, tomato and onion.

Ingredients:
- 1 cup dark chocolate chips, melted
- 1 medium avocado, mashed
- 1 tsp vanilla extract

- 1/4 cup cocoa powder
Method:
- In a bowl, combine melted chocolate, avocado, vanilla, and salt. Stir together until smooth. Place in the refrigerator to firm up slightly, 15 to 20 minutes.

Ingredients:
- 1/4 cup dark chocolate chips, melted, plus more chips for garnish
- 2 ripe avocados
- 2 tbsp raw unsweetened cocoa powder
- 1/4 cup milk
- 1 tbsp maple syrup
- 1 tsp pure vanilla extract
- Pinch sea salt
Method:
- In a food processor or blender, blend melted chocolate, avocados, cocoa powder, milk, maple syrup, vanilla, and salt until smooth, about 45 seconds.
- Divide mixture among four jars or glasses and top with more chocolate chips or chocolate shavings and store in the fridge until ready to eat.
Chocolate Avocado Bread
If you’re into banana bread then you’re in for a treat. Serve this avocado chocolate bread with tea as a nice warm dessert.
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp kosher salt
- 1/2 cup mashed avocado
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 & 1/4 cups grated zucchini
- 1 cup chocolate chips
Method:
- Preheat oven to 350°. Line a loaf pan with parchment paper and grease with cooking spray. In a large bowl, whisk together flour, cocoa powder, baking powder, cinnamon, and salt.
- In another large bowl, stir together avocado, sugar, eggs, and vanilla. Add zucchini, then add flour mixture. Fold in chocolate chips.
- Transfer batter to prepared pan and bake until a toothpick inserted into the center comes out clean, about 1 hour. Take out and let cool slightly in pan.
