Oh Fudge! 5 Fudge Recipes That Are to Die For

Who can resist chewy, sweet, chocolaty fudge? We know for sure that we can’t and since it’s National Fudge Day it’s the perfect excuse for us to try out these easy 5 fudge recipes and indulge in the chocolate goodness.

Pretzel Pecan Fudge Brownies

fudge recipesCrunchy, salty and sweet fudge brownies paired up with ice cream and caramel sauce sound like a dream right now and we don’t want to wake up from it.

Ingredients:

  • 1 cup pecans
  • 1/2 cup salted pretzels
  • 2 butter sticks
  • 2 cups semisweet chocolate chips
  • 1 cup sugar
  • large eggs
  • 1 tsp. vanilla extract
  • 1 1/4 cups all-purpose flour

Instructions:

  1. Heat oven to 350°F. Line a 13 x 9-inch baking pan with foil or parchment paper, letting ends extend above pan. fudge recipes
  2. Spread nuts in the pan. Bake for 7 to 10 minutes, stirring once or twice, until fragrant and toasted. Remove nuts from pan; cool, and then coarsely chop.
  3. Melt butter in a saucepan over medium-low heat. Add chocolate chips and stir until melted and smooth.
  4. Remove from heat and stir in sugar. Add eggs and vanilla and stir briskly until blended. Stir in flour, then 3/4 cup of the pecans. Pour into the pan. Sprinkle with remaining pecans and pretzels.
  5. Bake 30 to 35 minutes until a pick inserted in the center comes out with moist crumbs attached (don’t overbake). Remove pan and let cool then cut into squares.

Chocolate & Orange Fudge Squares

fudge recipesIf you are a big fan of carrot cake you’re going to like this one. We are obsessed with its smooth mix of zesty orange, fudgy chocolate and vanilla topped with icing sugar.

Ingredients:

  • 200g plain chocolate, broken into cubes
  • 200g brown sugar
  • 175g butter, plus extra for greasing
  • 3 eggs, separated
  • 140g plain flour
  • 1 tsp vanilla extract
  • Zest of 1 orange
  • 200g soft cheese (Preferably Philadelphia Extra Light)
  • ½ tsp vanilla extract
  • 50g icing sugar

Instructions:

  1. Heat oven to 180C/fan 160C/gas. Butter and line a baking pan.
  2. In a pot over medium heat mix the chocolate, sugar and butter for about 5 mins or until melted. Cool for 10 mins then beat in the egg yolks, flour, vanilla and half the orange zest. fudge recipes
  3. In a bowl, whisk the egg whites until fluffy. Stir ¼ of the whites into the chocolate mix, then carefully fold in the rest with a spoon. Pour the mix into the pan, then bake for 25 mins and a toothpick comes out clean. Cool then cut into squares.
  4. Beat together the cheese, vanilla, sugar and remaining zest until smooth.
  5. Spread over each chocolate square and serve.

Brownie Fudge Pie

fudge recipesThis ooey-gooey dessert has a little bit for everyone, with a layer of fudgy brownie, a hint of spice with cinnamon and a pie crust for pie lovers. Perfect for an easy dinner party dessert.

Ingredients:

  • 175g plain flour
  • 85g butter, cubes
  • 2 tbsp icing sugar
  • 1 tsp ground cinnamon
  • 3 large eggs
  • 300g light brown sugar
  • 1 tsp vanilla extract
  • 175g butter, melted
  • 50g plain flour
  • 50g cocoa, plus extra to serve
  • 50g macadamia nuts, chopped
  • 50g dark chocolate, chopped
  • Ice cream to serve
Instructions:
  1. Tip the flour, butter, icing sugar and cinnamon into a food processor and pulse to make crumbs. Add 2-3 tbsps water and pulse until it comes together. Wrap in cling film and chill for 20 mins.
  2. Heat oven to 180C/fan 160C/gas. Roll out the pastry on a lightly floured surface and line in a deep 23cm loose-based tart tin. Leave the excess pastry overhanging the edges. Line with baking parchment, fill with baking beans and chill for 15 mins.
  3. Bake for 15 mins, remove the paper and beans, then bake 5 mins more until the pastry is crisp and pale golden.
  4. Beat the eggs and sugar together to create a mousse-like texture. Stir in vanilla and melted butter, then fold in the flour and cocoa. Scatter the nuts and chocolate over the pastry case and pour the filling on top. Bake for 30 mins until firm with a slight wobble.
  5. Trim away excess pastry and serve with a scoop of ice cream and dusting of cocoa.

Mint Oreo Fudge Squares

These minty chocolate Oreo fudge squares are too damn good to pass up. The kiddos will love them too.

Ingredients:

  • 6 tbsps butter, divided
  • 1 package (300g) milk chocolate chips
  • 60g unsweetened chocolate, chopped
  • 1 can sweetened condensed milk
  • 1/4 cup crushed candy canes
  • 1 tsp mint extract
  • 16 Oreo cookies
  • 1 1/2 cups mini marshmallows
Instructions:
  1. Line an 8 in. square baking pan with foil, letting ends extend up sides; grease foil with 2 tbsps butter. In a metal bowl over simmering water, melt chocolate chips, unsweetened chocolate and 4 tablespoons butter; stir until smooth. Add milk, crushed candy canes and mint extract; stir until blended. fudge recipes
  2. Pour half the chocolate mixture into the pan. Arrange cookies over chocolate, cutting to fit as needed. Stir marshmallows into the remaining chocolate mixture; spread over cookies. Top with additional crushed candy canes. Refrigerate until firm, about 1 hour.
  3. Lift out of the pan, remove foil and cut into squares.

Peanut Butter Fudge Brownies

  1. Preheat oven to 350°F. Spray a 13×9 inch baking pan with baking spray and flour. Prepare brownie mix according to package directions in prepared pan, and bake at 350°F until a pick inserted comes out clean, about 25 minutes. Cool for about 1 hour.
  2. Place peanut butter chips, sweetened condensed milk, peanut butter, vanilla, and salt in a bowl and microwave on high for 1 minute. Stir until smooth then spoon over cooled brownies, spreading in an even layer.
  3. Place chocolate chips and cream in a bowl. Microwave on high for 2 minutes until chocolate is melted and mixture is smooth, stirring every 30 seconds. Spread over the peanut butter mixture. Refrigerate brownies until the top layer is firm, about 1 hour.
  4. Sprinkle with peanuts. Slice into 32 bars.

The Importance of a Father’s Presence

World Champion Youri Zoon On the Water In Ras Sudr

We watched Youri Zoon as he wowed the crowd with his incredible water splashing, mind-blowing moves and were intrigued to know more about his kite surfing journey, being a 2-time world champion and now coaching younger players. Youri managed to overcome his fears and exceed everybody’s expectations and here’s how.

So Youri, you came to Egypt a few years ago, how would you compare the level of the riders back then to their level now? 

The last time I was here in Ras Sudr was in 2017. This time we ran a super good freestyle event, definitely what I wanted to see and it’s really close to the world championship level so I am pretty stocked on what I see. Hopefully, I see a lot of the riders going into the world cup.

Tell us a bit about yourself – how did you get to where you are and what was your path up till here?

I’ve been a professional kite boarder for 16 years and I competed in the world cup for 15 years. I started when I was 12 years old. I just followed my dreams and eventually it took me all over the world winning world championships. Right now I’m not doing competition anymore but I’m doing a lot of demos, coaching and trying to pass on my passion and dream to the next generation.

What got you to start playing?

At a young age, I was always very competitive in everything I do, mostly sports. I just wanted to win a world cup and be the best, that was my drive and eventually, I got to where I wanted to be.

What is it like turning your passion into something you do for a living?

Obviously, a lot of people would like to travel the world and do kiteboarding for a living and I was fortunate enough to be able to do it. But I have to be honest; I have bad days just like everybody else. Youri Zoon

When things don’t go the way I want them to be, the conditions are not how I want it to be, and sometimes it’s busy and stressful, or I mess up a competition but then I realize that I’m doing what I love so I just shake it off and go to the next day.

What are the most interesting spots you’ve surfed at?

Every place has something special, for example, Ras Sudr is completely different than when you go to El Gouna. I enjoy traveling a lot to these unique places.

How is it like meeting and competing with other athletes?

Obviously, in the competition everyone goes for the same reason, that’s to win. We can be very good friends but as soon as the green flag is up there’s only one thing you want.

After the heat whether you lose or you win you’re still friends after all. But on the water, it’s a battlefield. It shouldn’t matter whether you’re friends or not. Over the years I gained a lot of friends but I gained a lot of competitors as well.

Being a father, what do you want to teach your kid when he grows up, do you want him to be just like you or seek other interests?

I would support my son in whatever he does and obviously, I want him to follow in my footsteps. I will pass on my knowledge and give him every single opportunity that I have in my power but he has to choose his own path and follow his own dreams (hopefully it’s going to be kiteboarding).

Actually last week I flew with him for the first time with a little trainer kite and it was a pretty proud moment for me.

If you had one piece of advice to give him, what would it be?

Nothing really comes for free. You have to work hard and a lot for it, there will be many setbacks but they will eventually lead to where you want to be.

Knowing that this is a high-risk sport. How do you deal with the fear of failure?

There are literally thousands of people out there doing kiteboarding who have never had an accident, not even a small injury. And then there are people like me who are looking for the highest level and balancing on a thin line. Youri Zoon

Riding world cups is all about trying to reach the highest level that you possibly can and sometimes it goes wrong and that’s part of the sport but then you have to recover and come back stronger.

What differentiates one player from another?

I would say style. Always stick to your own style, to what you want to show. That’s how I always rode, with a lot of power, speed and it wasn’t always the smartest thing because I lost competitions because of it.

It would have been smarter to just collect points and win but it was not what I wanted to show and that’s what differentiates me from other riders so I’m happy I chose that style.

What’s the most effective way to learn tricks fast?

There’s no fast way to learn tricks, there’s only one way and that’s the hard way. A lot of training, a lot of hours and hard work on the water. There are many videos on the internet that you could play in slo-mo and watch back. And just go out there and train as much as you can.

What was the most challenging thing you’ve ever faced?

If you’re competing it’s hard to stay steady in all the events because every event has a different wind, different reach, different crowd and also where you are in the ranking. If you start the season and you’re at the bottom then you can only go up but if you start in the 1st place then you can only go down so there’s a lot more pressure. I like a bit of pressure it pushes me to perform better. Youri Zoon

Some of the riders would like to know, what’s your number one tip when doing an unhooked trick or a trick with a handle pass?

Keep the bar close, if you have your arm all the way out there it’s hard to reach but if you bring it closer, your passing rotation of the bar is quite easy. So always bring the bar towards the hip and your passing is going to be a lot easier.

Berries, Mint and Honey Ice Tea

ice tea recipesThis berrylicious ice tea infused with mint and honey will be the ultimate sweet refresher for you this summer.

Ingredients:

For the Tea:
  • 8 Green and Black tea bags
  • 8 cups cold water, divided
  • 1/4 tsp baking soda

For the Mint Syrup:

  • 3/4 cup sugar
  • 1/4 cup honey
  • 1 cup water
  • 1 1/2 cups mint leaves, coarsely chopped, plus extra for garnish
  • 6 tbsps lemon juice (takes approximately 1 & 1/2 lemons)

For the Muddled Fruit:

  • 1 cup sliced strawberries, plus extra for garnish
  • 1 cup blueberries, plus extra for garnish
  • 1 tsp sugar

Instructions:

    1. Boil 4 cups of water then turn off heat and add tea bags and baking soda; let steep for 5 minutes. Put the other 4 cups of cold water in a pitcher and add the tea. Refrigerate until cold. ice tea recipes
    2. To make the honey mint syrup: Stir sugar, honey, water, mint leaves and lemon juice in a pan over medium heat; until sugar and honey are dissolved. Continue to simmer for 2 minutes to extract mint flavor; remove from heat and cool.
    3. Make the muddled fruit by putting the strawberries and blueberries into a medium bowl and gently muddle with a muddler or a large spoon. Sprinkle with 1 tsp of sugar, mix well and let sit for at least 10 minutes.
    4. Spoon 1/4 cup of fruit and juices into the bottom of a tall glass. Fill the glass with ice and pour tea into glass until about an inch from the top.
    5. Measure 2-3 tbsps of the Honey Mint Syrup into the tea and stir to combine.
    6. Garnish with mint, strawberries and blueberries.

    Nectarine Basil Ice Tea

    Refreshing summery flavors are all you need to quench your thirst on hot days. Make this easy recipe and take a pitcher to the beach or even to work for a hydrating drink.

    Ingredients:

    For the syrup:

    • 2 cups water
    • 2 ripe nectarines
    • 1/2 cup organic coconut sugar (or regular sugar)
    • 2 medjool dates (or more coconut sugar)

    For the tea:

    • 4 black tea bags
    • 8 cups water
    • Fresh nectarines, sliced
    • Fresh basil (optional)

    Instructions:

    1. Chop up the medjool dates into very small pieces and place them with nectarines and water into a pot, and heat until boiling. Bring the heat to low, stir and mash the fruits to infuse the flavor. When the sugar is dissolved, cover and remove from heat.
    2. Set aside for at least 30 minutes then strain into a bottle or container.
    3. Grab a larger pot and bring 8 cups of water to a boil and add the tea bags for 5 minutes max. Remove the tea bags and transfer the tea to a pitcher that you can place in the refrigerator to cool.
    4. Once cooled, combine the syrup, basil and tea into a pitcher and allow it to infuse for at least an hour.
    5. Serve in glasses over ice with fresh sliced nectarines and more basil if desired.

    Cherry Citrus Ice Tea

    Ingredients:

    • 4 cups boiling water
    • 1/3 cup cherry juice concentrate
    • 4 packets green or black tea if preferred
    • 4 slices lemon, orange, or tangerine

    Instructions:

    1. Place the cherry concentrate and tea bags in the boiling water. Steep for 3 to 5 minutes. Remove the tea bags and pour the tea into a pitcher. ice tea recipes

    Sunshine Ice Tea

    1. Place sugar in a saucepan with 3 cups water. Bring to a boil over high heat. Add tea bags. Turn off and let tea bags steep for at least 2 hours.
    2. Pour tea into a pitcher and squeeze excess tea from bags.
    3. Add lemon and orange juice and several cups of ice cubes.
    4. Fill to the top with water and enjoy!

    Lavender Ice Tea

    Big Zee has made it big on our screens in Ramadan 2021 and we wanted to get to know the man behind it all. Adam El Sharkawy has caught Egypt’s attention with his role Big Zee in Leabet Newton. Everyone is psyched to see what he is going for next.

    We’ve had the pleasure of doing a one on one interview to ask him what the audience is dying to know and he was happy to answer everything. Adam El Sharkawy Leabet Newton

    How does it feel to be back in Egypt after such a long time?

    It feels great! I feel like I belong in Egypt. For the first time in my life I feel like I fit in so yeah, I love being back in Egypt.

    What was it like playing alongside Mona Zaki?

    I love Mona Zaki. She helped me so much, even during the audition process she would correct my Arabic. If you had seen me the first day, my Arabic was really terrible! I love acting alongside her, she’s so nice and sweet and she was a huge help to me.

    How did you land the role in Leabet Newton?

    I did a film in America and the casting director of Leabet Newton saw it and she knew a friend of mine so she brought me in to audition for Big Zee who was called Big Mo at the time.

    I went for the audition but I can’t even begin to explain how bad my Arabic was. Originally I was supposed to play Luca, who steals the medicines from Big Zee’s house, but when I arrived to Egypt and met Mr Tamer Mohsen and Mrs Mona Zaki they asked me to try again for Big Zee and Mona helped me so much for the second audition by correcting my words. She’s a legend and she’s such a great actress that she was able to pick up my Arabic easily.

    To what extent was this role like you in real life?

    I relate very much because Big Zee is so close to me. An Egyptian who travels to America when he was a kid and rejects the Egyptian culture then circumstances make him go back to Egypt. It’s the exact same story of my life so it was easy for me to tap into.

    What was the hardest thing about this role?

    The hardest thing for sure was the Arabic. Sometimes I would say words that I didn’t understand but having Mr Tamer, Mona Zaki and Mohamed Farrag was reassuring.

    Which was your favorite scene?

    Any scene with Farrag was one of my favorite scenes. Farrag is amazing, he’s such a good actor and we had great chemistry. He brings such an intensity to the role. Farrag as a person is really nice and funny, he laughs and moves a lot like me, we both move around a lot in the set.  Adam El Sharkawy Leabet Newton

    I especially enjoyed the one where I was behind the door and he was trying to get in. I love the memes that were made about this scene they’re really funny!

    Tell us about your earlier work

    I did a couple of films, I think what got me the role in Leabet Newton was Lowlow, I played a role that’s a bit like Big Zee. A lover boy with no future who lives in America, he has a girlfriend who’s smart and wants to go to college but he tries to do anything to make her stay with him.

    Have you always wanted to do an Egyptian show?

    It never crossed my mind, I didn’t think that I could travel to Egypt to film a show but now that I did I see the value very much and now my goals are bigger.

    What is next on your agenda?

    Everything is in the air for now because I’m up for some projects in America and for sure I’d like to do some projects here so we’ll see but ideally I would love to work here and there. I don’t mind coming to Egypt every year to film something.Adam El Sharkawy Leabet Newton

    What does your perfect weekend look like?

    It will definitely have a lot of sleep. I’m a Leo so I sleep a lot! Could also be a nice brunch with my friends under the sun then we could play games or just talk and I love to go to bed early because I just love to sleep. Adam El Sharkawy Leabet Newton

    What other hobbies do you enjoy doing?

    I love being athletic and playing sports a lot. So if I’m not in acting class, writing or working on film you’ll find me outside playing American football, basketball or going to the gym.

    Who is your celebrity crush?

    When I was young it was Emma Watson from Harry Potter.

    What’s your biggest pet peeve?

    People asking me too many questions and repeating the questions in different ways.

    What’s your annoying habit?

    I bite my nails a lot.

    If you weren’t acting, what would you be up to right now?

    I could be a coach or doing anything related to sports.

    What is your favorite movie? Song? Holiday? Food? Halloween costume?

    I have a fear of failure but I over-prepare so I don’t look stupid in front of the camera.

    A Rottweiler or a Pitbull.

    What would be a good theme song for your life?

    I’d name it after my mom and dad I’m very lucky to have them as parents.

    What’s the weirdest question you’ve been asked?

    I’ve been asked to marry people a lot but it’s still early for me.

    What’s your horoscope sign?

    I’m a Leo Cancer. I was born on the 23rd of July.
