Pizza Dough

Ingredients:

  • 3 to 4 cups of flour
  • 1 tsp of sugar
  • 2 tsp salt
  • 1 ½ cups of warm water
  • 2 tbsp of olive oil
  • 1 envelope of active dry yeast

Preparation:

  1. Combine the flour, sugar, salt and yeast all together in a bowl of a stand mixer.
  2. As the mixer is running, add the water and olive oil and mix until the dough forms into a ball. If the dough is too sticky add more flour (1 tablespoon at a time). If the dough is too dry add more water (1 tablespoon at a time).
  3. Scrape the dough onto a floured surface, gently turn it into a smooth ball.
  4. Grease large bowl with olive oil, add the dough in it and cover it was a plastic wrap.
  5. Leave the dough for about an hour, until it doubles in size.
  6. Put the dough on a lightly floured surface, then cover it again letting it rest for 10 minutes. Gently roll out or shape to the desired thickness and size and load on your toppings.

Margherita Toppings

Ingredients:

  • 2 cloves roasted garlic
  • ½ cup of tomato sauce
  • 8 ounces of mozzarella cheese
  • Handful of fresh basil

Preparation:

  1. Mix the roasted garlic and olive oil in a small bowl.
  2. Brush the top of the dough lightly with this mixture.
  3. Top with your favorite tomato sauce.
  4. Shower it with the mozzarella cheese.
  5. Bake the pizza for 15 minutes.
  6. Remove from the oven and top with fresh basil.

BBQ Chicken Toppings

Ingredients:

  • Barbeque sauce
  • 1 cup of cooked boneless chicken breasts
  • 1 cup of sliced peppers
  • 1 cup of chopped red onions
  • Mozzarella cheese

Preparation:

  1. Top the dough with the BBQ sauce.
  2. Toss cooked chicken in the BBQ sauce and scatter all around on the dough.
  3. Add the cheese, peppers and red onions.
  4. Bake pizza for 15 minutes.

Akram Hosny might have taken a break last Ramadan but he is coming back hot ‘n heavy this summer with the release of his first ever single, “Law Kont” featuring Haifa Wehbe, a humorous, tongue-and-cheek rap song that poses the existential question, “If I weren’t me, what or who would I be?” We sat with him to learn about his new projects, and about having his first single and upcoming play all in the same season.

You have a funny new song out that also makes us think, how did it come about?

When I write songs, I always try to break the norms of song-writing and do something different. Which is what I did with “Law Kont”. It’s a song that asks a question we’ve all asked ourselves at some point: If you weren’t you, what would you be? My idea was to turn this question into a song and let the audience’s imagination roam free with the endless possibilities. Akram Hosny

Before the release of the song, the hashtag #LawKont was trending on social media, and it opened a conversation. Did you expect such a reaction?

The idea of asking “Law Kont” can be used to interact with the audience without having it be a song, it could have been a movie or another project all together. What we did was we used the concept of the song to open a conversation on social media without giving away what “Law Kont” is.Akram Hosny

We took the high level of engagement from celebrities and audiences as an indication that the release of the song would be well received. Akram Hosny

So why Haifa Wehbe? Seems like an unusual choice, doesn’t it?

There are two reasons for that choice. The first was that the lyrics of the song made me automatically think of Haifa, her beauty and sassiness. Secondly, I always try to come up with different and interesting combinations.

So, my collaboration with Haifa is unexpected; I am not a singer and when I do write and sing songs, they are usually to support the acting project that I am currently working on. So, when I thought of actually making a single with a video, I wanted it to be unique.

And as expected, the combination of Haifa and I was a successful one. Even before the release when we were still preparing the song and people would ask about it, they would smile at the idea of Haifa and I doing something together. Akram Hosny

Did you enjoy creating a rap song? Do you see yourself pursuing music?

I do not categorize myself as a singer who can sing all ranges of music, but I can sing the things that I relate to. With that being said, I do write meaningful songs with deep lyrics that I do not expect to sing, but that would require specific types of singers to perform.

But, I will repeat this experience again and keep writing songs in both a comedic context and a meaningful one for others to perform.Akram Hosny

And finally for the first time in Egypt, you’re doing a play! How does that feel?

I had my eye on theatre since I began my acting career in 2008, and I was always trying to get into it but with my projects on TV like Abo Hafiza, and with cinema, it became more difficult to realize.

However last year, I participated in a play for the first time, called 3otl Fani and was with Hesham, Chico, Ayten Amer, Nashwa Mostafa and Ismail Farghali, directed by Otaka and produced by Amir Teima who really made sure to have the play in the best shape possible.

3otl Fani was played during the Riad season in Saudi Arabia. We all wanted to relive the experience, so when I was approached with the idea of putting on a play here in Egypt and showing it to an Egyptian audience, I was more than willing.

So tell us about the process behind putting together that play in Egypt.

The production team suggested bringing back the combo of Akram and Ahmed Amin, and so we did.

The cast of the upcoming play consists of me and Amin with Reem Mostafa, and Ayten Amer, under the direction of one of the people I admire the most, Khaled Galal. His acting workshops produce the best people in entertainment every year; who end up taking the lead in all sorts of acting projects, and I am proud to be working under his direction.

The play should be ready by this summer. It is produced by Synergy, the idea is by Haitham Rizk, written by George Azmi and a workshop. I am proud to be working with George because he is one of the most creative people that I have met in my life, and would like to keep working with him on other projects.

Akram HosnyBesides the play, are you working on something else at the moment?

I am working on a series for the upcoming Ramadan season, but we are still in the early stages of assembling the cast and brainstorming ideas. As soon as all of this is set, we will announce it. Akram Hosny

Tabibi’s Tips On Hydration & Sun Protection During the Summer

A few tips and precautions to take against the summer heat. Get your sun protection and hydration to save your skin from sun damage.

SUN PROTECTION

Our bodies make vitamin D when we are exposed to the sun, which is essential for bone, teeth, and muscle health. But with that comes exposure to ultraviolet rays, which can damage skin cells and cause discoloration and skin burns, and can also increase the risk of skin cancers. UV rays tend to be strongest from 10 am to 4 pm.

With summer comes longer exposure time to ultra violet rays, so, what can we do to take care of our skin health during summer?

The first step is protection:

Put-on broad-spectrum sunscreen that blocks both UVA and UVB rays before you go outside. Do not forget to put a thick layer on all exposed skin. Get help for hard-to-reach places like your back.

Sunscreen is not recommended for babies who are 6 months old or younger. The FDA recommends keeping infants out of the sun during the middle of the day and using protective clothing if they have to be in the sun.sun protection

SPF:

Sunscreens are assigned a sun protection factor (SPF), which is a number that rates how well they block UV rays. Higher numbers indicate more protection. You should use a broad-spectrum sunscreen with SPF of 15 or higher.

Please remember that sunscreen wears off. Put it on again if you stay out in the sun for more than 2 hours and after swimming, sweating, or toweling off. 

*Important to note: Sunscreen may interrupt Vitamin D absorption by the skin.

HYDRATION

As we all know, dehydration can lead to serious complications like kidney problems and heat exhaustion. But it can also affect your skin health.

Along with increased water intake, you must consume vegetables and fruits that contain big amounts of water and fibers. Try to reduce your sugar intake as it increases the sense of dehydration, and salt intake to avoid water retention in your body.

Summar fruits are usually full of water. Watermelon, for example, is very cool in nature and quite filling, without overloading the stomach. Try to avoid pre-cut fruits when you are not sure about its source and storage, as it may carry risk of infection.

Cucumbers and lettuce are also full of fiber and water and will keep you hydrated, they also help your bowel movement, protecting against constipation. Add lots of them in your salads or snack on them during the day.

Mint is an easily available and an inexpensive herb which can be used in sauces, dips and in making refreshing cooling drinks, because of its refreshing nature and cool taste.

How much water should we drink?

Insufficient water intake is not only a risk for dehydration, it can also complicate the process of digestion and increase the sense of hunger, which will make you consume more calories. Low water intake during the summer heat can increase the feeling of tiredness, dizziness, and overheating during exercises.

So how much water is enough? On average, we need at least 12 cups (around 2 liters) of fluids daily.

*Tasty refreshment: Try mixing water with cucumber slices, a cinnamon stick and some mint leaves.

Why do we see an increase in ENT cases in summer?

Swimming is a favorite past-time in summer, but with swimming comes the chance of contaminated water entering the ear canal, especially in pools. A minor trauma, like scratching the ear may trigger an infection of a bacterial or fungal variety, the resulting ear infection is called Swimmer’s Ear (or Otitis Externa). ENT

Water entering the ears while swimming can also swell up the wax inside, leading to discomfort and hearing problems. Middle ear or eardrum infections often follow a cold or sore throat, which in turn can happen due to accidental swallowing of water or water entry into the nose.

Summer also marks the pollination season for many flowering plants and trees. Pollen dispersed into the air may trigger an allergic response in the nose leading to Seasonal Allergic Rhinitis. ENT

That’s not the only thing you have to watch out for in the summer; dryness coupled with rising temperatures may trigger nasal bleeding called Epistaxis. Hot weather dries up the nasal passages, especially at the nostrils.

The mucosa inside the nose is so richly supplied with blood vessels that it bleeds easily when hot air is inhaled. Nasal pricking increases the incidence of Epistaxis.

Also, the gathering of people in summer on the beaches, in restaurants, food corners and closed air-conditioned areas increases the incidence of droplet infection, causing Sinusitis and Pharyngitis. ENT

How does air conditioning play a role?

Air conditioning can affect people’s sinuses. A cold, dry room triggers runny noses the same way that going outside in the winter after being in your warm house does. The sudden change in temperature and humidity triggers glands in the nasal membranes to produce mucus.

The problem may be particularly common in those with an allergy because small particles like pollen, mold spores, pollutants and dust mites can get trapped by air-conditioning filters and then released into the air when the machine is turned on and cause allergic reactions that may be particularly long-lasting.

Also, throat congestion and infection may occur from long exposure to dry cold air or from droplet infection being trapped in a closed non-aerated place.

Can children be more vulnerable?

Children are most vulnerable to these problems, as they like gathering and playing together, which makes them easily exposed to droplet infection. The frequent daily intake of cold citrus juices, ice cream and soft drinks may also lead to throat infection and Tonsillitis, especially with those suffering from Chronic Tonsillitis.

Children commonly scratch their ears after swimming, which leads to bacterial or fungal external ear infection. In addition, nose pricking done by some children can cause nasal bleeding (Epistaxis).

How to avoid ENT problems
  • Prevention is better than cure.
  • Pool water should be clean and regularly maintained.
  • There is no need for earplugs.
  • Definitely don’t use earbuds or any other tools for drying or cleaning the ear canal. Leave the ear to dry by itself.
  • Avoid nose pricking.
  • Those prone to seasonal nasal allergy on a yearly basis will benefit from a course of prophylactic (preventive) medicines taken during the allergy season.
  • Prolonged periods in air-conditioned surroundings are definitely not advisable. Fresh air is by far healthier.
  • Decrease the intake of ice cream, canned juices and soft drinks and replace them with water and fresh home prepared juices.
  • The filter of the air conditioner should be replaced or cleaned regularly.
How to handle a problem before visiting the ENT specialist

Ear infection can be painful and needs analgesics and maybe antipyretics to decrease any fever, eg. Panadol. Don’t try to clean the external ear or use any local medication or wash the ear.

Throat infections also need analgesics, antipyretics, warm fluids and semi-solid food.

Nasal bleeding should be handled by leaning slightly forward, pinching gently the nose and putting ice on the root of the nose. If any kind of nasal drops is available, you can put few drops in both nasal openings before nose pinching. Check blood pressure, especially in hypertensive cases.

  • 1 1/2 cups baked sweet potato cubes
  • 1/2 cup cocoa powder
  • 1 egg, (vegan option: 1 flax seed egg)

  • 2 vanilla sachets
  • 1/2 cup dark chocolate chips
  • 2/3 cup oat flour
  • 1 1/2 tsp baking powder
  • 1/4 cup coconut oil
  • 1/4 tsp salt
  • 7 tbsp honey

Preparation: Banana Brownie Sundae

  1. Mix all of the ingredients, except the dark chocolate chips, in a bowl. Then fold in chocolate chips with a spatula. Keep some to sprinkle on top.
  2. Bake brownies in the oven for about 25 minutes.
