Ingredients:

(per portion)

  • 15 g onion (finely sliced and fried

until slightly crispy)

  • 25 g black lentils
  • 50 g spaghetti
  • 50 g macaroni
  • 25 g chickpeas
  • 50 g white rice
  • 30 g tomato sauce (home-made)
  • 15 ml corn oil
  • 5 ml vinegar
  • 5 g salt
  • 5 g cumin
  • 10 g chilli powder
  • 1 clove garlic (finely chopped)
  • 1 g black pepper

Preparation:

Separately boil the rice, macaroni, lentils, spaghetti and chickpeas and keep to one side. Lightly fry the garlic and add vinegar, cumin and salt. Add the chilli pepper to the homemade tomato sauce. Mix the spaghetti, macaroni, rice, lentils and chickpeas, and then top with the spicy tomato sauce and fried onions. Add the garlic and vinegar sauce to taste.

Dar Ward’s Easy Stovetop Baba Ghanoush

Serves 4

Ingredients:

  • 1 kg eggplant
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 4 medium tomatoes, chopped
  • 2 garlic cloves, minced
  • A small batch of parsley, chopped
  • ½ tsp cumin
  • Salt to taste
  • Olive oil for garnish

Preparation:

Over medium heat, place eggplants with skins in a pan for 10-20 minutes until softened. Remove and peel by hand, then mash. Add chopped peppers, tomatoes, garlic, cumin, salt, and parsley and blend using hand mixer. Garnish with olive oil and chopped walnuts, if preferred.

Become the Rally Car Racer You Always Wanted to Be!

If you’re an adrenaline junkie with the dream of speeding through the desert, flying up and down dunes … you’re in luck! Cairo West Magazine spoke to Omar Amin from Rally School Egypt to get the details behind this dusty, fun sport!

Rally Car RacerRally School Egypt was founded in 2008 by racing gurus Azzam El Farouky & Abdelhamid Abu Yousef, along with the help of other enthusiasts. The group of motor heads decided to invest and grow the sport in Egypt by organizing the first local races to get rally car lovers prepped and ready for participation in international races like the Pharaons Rally. Amin says the idea behind establishing the school was to make the knowledge and data these professionals accumulated through years of experience accessible to budding Egyptian racers interested in beginning their rally racing careers.

The course takes places over 2 months, comprising of theoretical classes in the evening and practical training on the weekends. There are eight modules, including topics like Car Off-roading 101, Co-piloting and Navigation, Race and Piloting, and Team Management and Assistance.

According to Amin, over 80% of the current rally racers in Egypt are Rally School Egypt graduates. There are no specific requirements needed to enroll and go through the course, but in order to join the rally scene in any capacity, it is preferable to have desert driving background and own a 4×4 vehicle. Graduates can establish their own racing team, buy or build a racing car, become a co-pilot, or perhaps join an existing racing team in a management capacity.

The next session of the course begins in December 2017. So shift into gear if you want to get dusty and become a rally car driver!

El Mawardia in Sheraton Cairo

On the ground floor of the North Tower, El Mawardia Oriental Café offers a calm and comfortable setting to kick back and enjoy some traditional dishes cooked to perfection – some with a twist. We paid an evening visit to this place that’s aiming to be one of the best Egyptian cuisine resturants in Cairo and left without an inch of stomach space to spare.

Signature dishes: Traditional Hot & Cold Mezze, Lamb Mixed Grill, Roasted Hamam, Koshari Wonder Pot

Dishes sampled and ingredients: We began our meal with the Traditional Hot & Cold Mezze, which not surprisingly, is a meal in itself. The betingan was naughty – brilliantly spicy and loaded with garlic, just the way we like it. Two types of salad were on offer, the fattoush and tabouli, which gave the meal a necessary balance of freshness. The meat and cheese sambosak were a delight, not too oily and generously sized. The wara2 3enab had a very different taste to any other you may have ever tried; they were filled with cracked bulgur wheat, which sets them in a category of their own. The cheese dip had tahini mixed into it, which resulted in quite a distinctive flavor, and the falafel patties were thin and crispy.

For mains, we tried the Kebab Mixed Grill, comprised of several skewers of chicken, veggies, lamb cubes, and beef tenderloin cubes resting on large pita bread topped with grilled onions. The meats were tender and succulent, and nicely balanced with loads of fresh veggies – very welcome when a meal is meat heavy. We also tried the Chicken and Meat Shawerma sandwiches, which arrived in a lovely crispy pita wrap and with a wonderful garlic tomeya sauce. Juicy and bursting with flavor, one of the best shawermas we had in a long while. The Koshari Wonder Pot was very generous and topped with a generous helping of crispy fried onions. A noted aspect was the two types of pasta filling the pot, both macaroni and spaghetti. To cap the meal off, we tried their Baba with Rosemary Honey Syrup and a selection of Oriental sweets. Everything is baked and prepared on premises, and we were happy to find that the sweets were not terribly over sweetened, light, and crunchy.

Other menu options that appealed: Roasted Hamam, a nice selection of sandwiches and salads.

Beverage options: Alcoholic beverages, fresh homemade juices, soft drinks, and hot beverages.

Décor: Low wooden tables, Oriental café style. Lovely bronze inlay on the tables, and a welcoming vibe in a well-lit space suitable for meetings and intimate meals.

Ambience: Soft music, well ventilated, with both indoor and outdoor seating. Outdoor terrace for the shisha aficionados, with a large selection of flavors on offer. The kind of place you want to bring out-of-town guests for a good variety of local cuisine and atmosphere. Live music on Thursdays and Fridays from 8 pm onwards.

Clientele mix: Older crowd, business types, and hotel guests.

Price range: Moderate to high prices, but affordable for the quality.

Check-up & Screening Guidelines for Men

Getting the right screening test at the right time is one of the most important things a man can do for his health. Screenings find diseases early, before you have symptoms, when they’re easier to treat.

You can get some screenings at your doctor’s office. Others need special equipment, so you may need to go to a diagnostics lab. Which tests you may need depends on your age and your family history, and whether you have risk factors for certain diseases. You and your physician should work together to develop a specific preventive health-screening plan for you.

There are regular basic check-ups for everyone. As you get older, you may become prone to some diseases, hence more screening tests are required with aging. The testing frequency depends on the results and your risk profile. The following is a list of the recommended screening tests, and how often you may need to get them done based on your age group.

Ages 18-39

 Weight and height screening: The combination of weight and height determine your body mass index (BMI), the most widely used measure of overweight. Measure weight annually, and height once every 10 years past age 50

Eye exam: At least one exam from ages 20-29 and at least two exams from ages 30-39

Hearing test: Starting at age 18, then every 10 years

Dental Exam: One to two times every year

Heart health:

– Measure blood pressure at least every 2 years if normal

– Cholesterol test (fasting lipoprotein profile), starting at age 20, and then every 5 years

Testicular exam: Monthly self-exam

Skin Health: Monthly mole self-exam; by a doctor every 3 years, starting at age 20

Sexually transmitted diseases (STDs): Sexually active adults who consider themselves at risk for STDs should be screened for syphilis, chlamydia, HIV, and other STDs

Thyroid test (TSH): Start at age 35, then every 5 years

Ages 40-49

In addition to the aforementioned:

Eye Exam: Get an exam at age 40, then every 2 – 4 years or as your doctor advises

 Lung cancer: Annual screening for lung cancer with a low-dose CT scan in adults ages 55 to 80 years who have a 30 pack per year smoking history (smoked one pack/day for 30 years, two packs/day for 15 years, etc.) and who currently smoke or have quit within the past 15 years.

Ages 65 and Older

 In addition to the aforementioned:

Bone Health: Get a bone mineral density test at least once. Talk to your doctor or nurse about repeat testing.

During each check-up, ask your doctor regarding any recommended immunizations. Remember, vaccines are not only for children!
