Troia in Heliopolis

Troia is a great restaurant in Heliopolis is the new meeting point for those who like to enjoy shisha, nice soft drinks, food and their friends’ company.

Signatures Dishes & Dishes Sampled

Signature dishes include the Troia Mezza Platter, home-made cold mezze of hummus, tahina, babaganoush, tabbouleh and yogurt salad; Troia Four, a variety of appetizers including fried mozzarella sticks, chicken wings, calamari and potato skins, served with a variety of home-made dipping sauces; Salted Crust Chicken, the famous Turkish style whole chicken, oven baked to perfection and the Brownie Skillet Sundae.

After asking the maître d’s recommendation, we started with two drinks, the Virgin Green Apple Sangria and Electric Lemonade. The Lemonade was so refreshing; it left us wanting a second round.

After drinks, the starters came. The Troia Mezza Platter was really tasty and satisfying, our favorites were the hummus and tahina! Troia Four was perfect for sharing with your friends on a night out, something for every taste.

We opted to share the Salted Crust Chicken for our main dish. The dish was enough to accommodate two hungry diners, and could even feed three! The homemade taste delivered nostalgic feelings of grandma’s family lunches. Important to note is that Troia is one of the few places in Cairo that makes this dish in authentic Turkish style.

To wind up a substantial meal, the maître d’ brought us the Brownie Skillet Sundae, served on a hot plate with vanilla ice-cream and caramel. A decadent end to a very comforting meal.

Greek Moussaka, Linguini Alfredo, Diavola Pizza, Shish Tawouk wraps, Fish and Chips, Fattoush, Lamb Couscous, Molten Cake and Baklava.

Décor & Ambience

Modern and casual, the indoor area is really cozy, perfect for Valentine’s Day and a night out with friends. It has two floors, both with glass walls to allow the sunlight to enter. The outdoor area is spacious and comfortable. The kitchen is open to the restaurant, so you can enjoy your meal while you see the chef preparing the rest of the orders.

Troia’s Salt-Baked Chicken

 

Try this innovative take on a family dinner, a whole chicken covered in dough and seasoning then baked in the oven! A big thank you to Troia for providing us with this unique recipe, perfect for your next gathering.

Ingredients:

  • 1 whole chicken (1kg)
  • 20 g fresh mixed herbs
  • 10 g fresh garlic
  • 2 g black pepper seeds
  • 2000 g sea salt
  • 200 g yellow basmati rice, cooked
  • 150 g grilled vegetables
  • 50 ml mushroom sauce
  • 50 g carrot
  • 25 g Italian lemon
  • 2 g bay leaf
  • 20 g celery
  • 10 ml olive oil

Preparation:

  • Preheat oven to 180°C. Place the flour, salt, and thyme in a bowl. Add the water and egg and stir until well combined.
  • Knead on a lightly floured surface for 2-3 minutes or until smooth. Shape into a ball and cover with plastic wrap.
  • Place in the fridge for 30 minutes to rest.
  • Rinse chicken cavity under cold water, pat dry inside and out with paper towel. Place in a small roasting pan.
  • Place the bay leaves, rosemary, half the lemon slices and half the thyme sprigs in the chicken cavity. Lift the skin under the breast. Place the garlic, butter, remaining lemon slices and remaining thyme under the skin.
  • Loosely tie the legs together with kitchen string. Brush with olive oil and season well with salt and pepper.
  • Roll the dough out on a lightly floured surface large enough to fit over the chicken. Place over the chicken and seal around the edge.
  • Bake in preheated oven for 1 hour 45 minutes. Remove from oven and set aside for 15 minutes to rest.
  • To serve, use a large sharp knife to break open the crust. Place over yellow rice.

Qahwa’s Cobb Salad

 

Cobb Salad finds its’ origins in 1937 America where it was invented at the Hollywood Brown Derby restaurant. This crunchy and filling salad can be enjoyed by all in just a few simple steps, follow the steps provided by Qahwa!

Ingredients: (4 to 6 servings)

  • 1 large lettuce head lettuce, cut into small pieces
  • 250 g green pepper
  • 250 g sweet corn
  • 200 g red kidney beans
  • Pico de gallo
  • 8 slices of grilled beef bacon
  • 200 to 250 g of boneless, shredded grilled chicken breast
  • 3 tablespoons barbeque sauce
  • 3 tablespoons ranch sauce
  • 150 g of grated mixed cheese

Preparation:

Evenly arrange grilled chicken, mixed cheese, bacon, and sweet corn, red kidney beans, and green pepper in a row on top of the lettuce. Drizzle the barbeque and ranch sauces over the salad, and now dig in!

Lokali’s Vegan Pasta Recipe

 

Veganism is on the rise in Cairo, and Lokali gives the people what they need! Check out this super easy recipe for vegan pasta dough and an accompanying sauce. Yum, yum! Note: This recipe makes three portions.

Ingredients:

  • 150 g plain flour
  • 50 g semolina flour
  • 3 g salt
  • 110 g water (or 2 large eggs for non-vegan option)

Preparation:

  • Sift the flour and semolina; add salt and water (or eggs for non-vegan option).
  • Put in food processor and mix for 15 to 20 minutes, or until it forms a ball.
  • Let it rest in the fridge for at least 30 minutes, then roll out by hand or with a pasta machine.
  • Let it dry overnight, then store, or cook immediately.

Sauce suggestion:

Chop garlic, onion, eggplant and zucchini and sauté in olive oil. Add home-made tomato salsa before tossing into the freshly cooked pasta. Garnish with chopped fresh basil and chopped walnuts.

Crave: Celebrate Valentine’s Day with a Chocolate Fondant

 

Valentine’s Day is around the corner and nothing would be better than the combination of chocolate and love. Our hot and gooey chocolate fondant is a clear and definite declaration of your love. The connection between chocolate and Valentine’s Day goes back to the Roman era. In Victorian days, Richard Cadbury produced chocolate that everyone could afford, not only the well to do, and created beautiful boxes for chocolates with roses, considered a symbol of romance.

Ingredients:

  • 85g/3oz caster
  • 150g/6ozbutter, chopped, plus extra for greasing.
  • 150g/6oz dark chocolate (70% cocoa solids), roughly chopped.
  • 3 free-rangeegg
  • 3whole free-range
  • 1 tablespoon plain
  • 1 scoop of ice-cream, to serve

Preparation:

  • Heat the oven to 180o C/350o F/Gas 4. Lubricate individual pudding molds.
  • Put sugar chocolate, butter, and sugar in a heatproof bowl over pan with boiling water.
  • Start heating the chocolate and butter gently until the mixture melts then take it off the heat and stir until combined.
  • Add the beaten whole eggs and egg yolks and stir well.
  • Pour into the pudding molds, and then put them in the fridge to chill for 20 to 25 minutes.
  • Remove the molds from the fridge and place them onto a baking tray.
  • Put the tray into the oven and cook for 8 or 9 minutes.
  • Rest the fondant for one or two minutes and serve.

Ingredients:

  • 1 salmon fillet, diced
  • 1 whole avocado, diced
  • 2 slices Japanese pickled ginger, minced
  • 30 ml house Bonsai ponzu
  • 200 g thinly sliced potatoes

Preparation:

  • Dice avocado and add ginger and ponzu sauce in a bowl.
  • Dice salmon and add ginger and ponzu sauce in another bowl.
  • Place avocado layer in a circle form.
  • Then top it with a layer of the salmon mix.
  • Garnish with deep fried potato slices.
  • Add remaining ponzu sauce before serving.
