Beef Brisket is a delicious cut of meat that requires a few tricks to be prepared to perfection.

Ingredients
1.5 to 2 kg whole brisket cut, with the fat layer slightly trimmed, you need a small layer of fat to ensure your brisket is juicy and succulent.
For the rub you will need:
- 2 tablespoons chilli powder
- 2 tablespoons salt
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon black pepper
- 1 tablespoon sugar
- 2 teaspoons dry mustard
- 1 crushed bay leaf
- 3 tablespoons ketchup
- 1 1/2 cups beef stock
Method
Preheat the oven to 300 °F.
Make a rub by combining chilli powder, salt, garlic and onion powders, black pepper, sugar, dry mustard, bay leaf and ketchup. Rub the mix onto the raw brisket on both sides with your hands, and place in a roasting pan.
Add beef stock and enough water to yield about 1/2 inch of liquid in the roasting pan, cover pan tightly with foil, and cook for 4 hours, or until fork-tender.
Remove the foil and continue cooking for 10-15 minutes.
Trim the fat and slice meat thinly across the grain. Top with juice from the pan.
Serve with mashed potatoes or steak fries.
