Chocolate Chip Peanut Butter Pancakes
This chocolate chip peanut butter pancakes recipe is the perfect breakfast to make on a lazy Saturday morning.
Ingredients:
- 1-3/4 cups all-purpose flour
- 2 tablespoons brown sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 large egg, room temperature
- 1/4 cup peanut butter
- 1-1/2 cups 2% milk
- 3 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup chopped ripe banana
- 1/2 cup semisweet chocolate chips
- Maple syrup, optional
Method:
- In a bowl, whisk flour, brown sugar, baking powder and salt. In another bowl, whisk egg, peanut butter, milk, melted butter and vanilla until blended. Add to flour mixture; stir just until moistened. Fold in banana and chocolate chips.
- Preheat pan over medium heat and lightly grease. Pour some batter and cook until bubbles on top begin to pop and bottom is golden brown. Turn; cook until the other side is golden brown. If desired, serve with additional bananas and syrup.

- 1 tablespoon butter, softened

Method:
- Spray 12-ounce mug with cooking spray. Add butter; microwave on high until melted, about 10 seconds. Stir in peanut butter and sugar until combined. Add egg yolk; stir in flour. Add milk and vanilla extract. Top with peanuts.
- Microwave on high until set, 1 to 1-1/2 minutes. Serve immediately.

Method:
- In a large bowl, combine the peanut butter, honey, soy sauce, oil, garlic and curry powder until blended. Cut chicken wings into 3 sections; discard wing tips. Add wings to peanut butter mixture; stir to coat. Cover and refrigerate for 2 hours.
- Transfer to an ungreased baking dish. Bake, uncovered, at 375° for 35-45 minutes or until chicken juices run clear.
