In a world largely unprepared for the surge of Covid-19 cases that have affected communities across the globe, one of the most pressing needs has been for artificial breathing devices. Essential for the support of critically ill patients who need vital breathing support, hospitals across the globe have been scrambling to meet requirements.

With Egypt also facing the same challenge, local 3D printing enterprise Fabri Gate has stepped up to the plate and joined forces with another local initiative, Covid-19 Egypt Response Team. Recent developments in ventilator design include RapidVent, a joint project involving several departments from the University of Illinois, including The Grainger College of Engineering and Creative Thermal Solutions, a Champaign, Illinois based-company. Working hand in hand with engineers, doctors, medical professionals, designers, user-experience experts, and manufacturing experts from the industry, the new design has been successfully tested and has been licensed by more than 20 external organizations since March of this year.

Fabri Gate is now turning out ventilators based on this design to meet the need across Egypt’s hospitals, by using its skills in 3D technology. The production process meets the urgent nature of the need, and will greatly benefit the medical system at a critical time. Already known for its successful initiative of re-creating damaged reefs to support marine life, the company is throwing a spotlight on the vast range of applications available through 3D technology.

Tuna Tartare Quinoa Salad By ‘Mezcal’

Mezcal’s Tuna Tartare Quinoa Salad is super delicious, and super healthy, and the secret is in the sauces and juices mix. Check it out!

Ingredients:

• 70g Tuna
• 10ml lime juice
• 30ml Yuzu
• 1g spring onion
• 1g white sesame
• 180g cooked white quinoa
• 10g tomato, cut small cubes
• 10g white onion, diced
• 20g avocado
• 10g cucumbers, cubed
• 5g capers
• 15ml balsamic vinegar
• 150ml soy sauce
• 50ml olive oil
• 50ml sesame oil
• 100ml hoisin sauce
• 50ml orange juice
• 10g crushed garlic

Preparation:

Cut tuna into small cubes.
In a bowl, mix the lime, yuzu sauce, spring onions together and then add the tuna into the mixture and mix again using a spoon.
Boil 180g of white quinoa then strain.
In another bowl, add the tomato, white onion, cucumbers, and capers to the quinoa and mix them with olive oil, balsamic vinegar, lemon, salt and pepper.
Place the quinoa on the plate then add the tuna on top of it, sprinkle the tuna with sesame seeds.

The holy month of Ramadan is when we all try to give up bad habits, learn a thing or two about endurance, patience and gratitude. Did you know that the word ‘Ramadan’ comes from the Arabic root ‘Ar-Ramaad’, which literally means scorching heat or dryness? This Ramadan, let’s try to adopt good habits, make the most of fasting long, hot hours, and give our bodies and souls the care and attention they need.

What to eat OR not to eat

We all can’t help but splurge when it comes to the amazingly delicious dishes of Ramadan, especially after fasting for almost 16 hours. Especially with all the delicious Ramadan desserts but we need to pay a little more attention to our eating habits this month.

This year, try breaking your fast with a salad or soup first instead of digging into the stuffed pigeon right away. Then wait for 15-20 minutes and maybe have some rice topped with your mom’s famous molokheya. If there is still room for more, maybe indulge in a small piece of bechamel pasta. Make sure you leave the dining table not feeling too full.

Give yourself an hour or two before you start enjoying your Om Ali or puffy kattayef dipped in eshta. As for sohour, give up the falafel and omelet and try enjoying yoghurt topped with honey and your choice of fruits, or go for a small serving of homemade foul. Finally, please don’t forget to drink A LOT of water. You have 8 hours, so try to drink at least 1.5 liters of water, you will need it.

On the occasion of Ramadan, try making this Chicken Dukkah Salad;

Ingredients:

  • Chicken tenderloin cubes
  • 1 tablespoon olive oil
  • 4 cherry tomatoes, chopped
  • ½ cucumber, chopped (optional)
  • Handful of mint leaves
  • Handful of coriander leaves
  • Handful of parsley leaves
  • Handful of arugula leaves
  • 1 cup freekah (cracked wheat, or can substitute with quinoa)
  • 4 eggplant, large (peeled and cut into cubes)
  • 2 cups sliced or chopped mushrooms
  • 1 tablespoon sundried tomatoes
  • 1 tablespoon raisins (optional)
  • Sumac, thyme and dried mint
  •  Salt and pepper to taste

Preparation

  1. To make dukkah, separately toast each of the seeds and nuts: Place in a dry frying pan over medium heat and toast for 2 to 3 minutes, or until lightly colored and fragrant.
  2. Crush the seeds separately using a mortar and pestle, to get the desired consistency for the dukkah. Mix them all together, adding the sumac, thyme and dried mint. Season with salt and pepper.
  3. Toss to coat chicken tenderloins in a little of the dukkah. Cook in 1 tbsp oil on a frying pan over low heat, turning to prevent dukkah from burning, for 5 to 7 minutes, until cooked through.
  4. Meanwhile, combine freekah, tomato, cucumber, mushrooms, cooked eggplant, raisins, sundried tomatoes, mint, coriander, arugula and parsley.
  5. Whisk to combine ¼ cup of tahini, ¼ cup of olive oil, 2 tablespoons of lemon juice, and 2 tablespoons of vinegar. Season with salt and pepper. Drizzle over salad.
  6. Garnish with breadcrumbs. Top with chicken and serve.

Are you feeling the Coronavirus apocalypse? 

Are you overstocking supplies? Disinfecting food you digest? Burning elevator buttons with chlorine to disinfect them? And even dumping your own beloved family pet for fear of COVID-19? In spite of the fact that up-to-date health authorities state that we cannot get infected through digesting the virus or through our pets, let’s admit it, we are just freaking out.

It is understandable that it feels like the end of the world especially for the suffers of illness anxiety disorder (IAD), formerly known as hypochondriacs; those who are sick because they are so anxious about getting an illness .The believers that every mild headache is a brain tumor and every stomach ache is colon cancer and with Coronavirus, every cough or mild tiredness is the highway for a COVID-19 death. Even in the absence of any physical symptoms, IAD makes some people feel doomed with an illness no matter what.  Sadly, this kind of anxiety is not even relieved by a doctor’s assurance. Just a draining cycle of negative thoughts and psychological responses.

Consider the state of the info-demic we are suffering, caused by the huge amount of confusing and repetitive information bombarding us from all directions. From social media to TV and WhatsApp forwards. IAD patients are seriously anxious about contracting the virus.

Anyone is at risk of IAD, young and old. The diagnosis comes with at least a duration of 6 months of overloading fear of having or developing a serious disease, even in the absence of physical symptoms or the presence of mild forms. Constantly checking for different signs of illness along with abuse or neglect of medical care, hypochondriacs don’t believe doctors’ reassurances and their worst enemy is to be told, “It’s all in your head”.

Other than the financial burden caused by IAD caused by excessive spending on medical care, the disorder can severely affect the functional life of the patient, affecting the family and professional life. Ignored IAD can be overwhelming to some people, forcing them to develop suicidal thoughts.

A study in China aimed to assess the population’s mental health burden during the epidemic, showed that nearly 1 in 5  participants had depressive symptoms and sleep problems, probably related to worry about being infected and feared that the epidemic was hard to control. The impact of COVID-19 on our mental health and stress level is hard to notice.

It is time to understand the real impact of communicating or manipulating data on COVID-19. The impact of these actions can be overwhelming, especially to IAD patients.

It’s critical that we all adapt a health routine to overcome any hurdles created by anxiety over COVID-19 or by the current unprecedented homestay. It’s paramount that we focus on what we can control.

  • Follow the precaution of physical distancing, handwashing, cough etiquette and disinfecting.
  • Don’t get distracted by all the social media buzz. Find a reliable source like WHO or local public health authorities to stay informed.
  • Eat healthy, stay active, stay connected with family and friends.
  • Stay mentally healthy. Find time to relax, develop a new skill or polish an existing one.
  • Seek healthcare or professional support if you feel your fear and anxiety is uncontrollable.

We understand that our normal life has been temporarily suspended and that it is a bit scary. But please remember that people react to fear differently.  Let’s try to slowdown and enjoy the family moments and the pause from our fast-paced life. Because, as we know, excessive anxiety about getting sick can be an illness.

6 quick tips to help guide you with home exercises and ensure you don’t feel dehydrated during long fasting days.

  • Ensure adequate water intake during a workout and between iftar and sohour to avoid dehydration. Also, make sure that you exercise under neutral thermal conditions.
  • Aerobic training could be done either immediately before or at least 2 hours after iftar.
  • Aerobic training sessions before iftar should not exceed 30 minutes. This could be increased to 1 hour after
  • Weight training is better practiced after iftar due to the decrease in motor coordination and alertness during fasting. You have to wait for at least 2 hours before exercising.
  • Weight training sessions should be 45 minutes to a maximum of one hour.
  • Training intensity should be kept to moderate to moderately high for highly-conditioned individuals. Also, training frequency should be decreased to allow better recovery.

Japanese-American actor and writer Darren Barnet (NBC’s This Is Us) takes his place among the next generation of Hollywood heartthrobs with a starring role in Netflix’s highly anticipated coming-of-age comedy Never Have I Ever created and inspired by executive producer Mindy Kaling’s childhood. Never Have I Ever centers around the complicated life of Devi (Maitreyi Ramakrishnan), a modern-day first-generation Indian American teenage girl. Barnet will soon heat up televisions across the nation as Devi’s love interest Paxton Hall-Yoshida, a popular upperclassman with a heart of gold. If that’s not enough, Barnet is also set to star as the male lead of the latest installment of the American Pie franchise titled, American Pie Presents: Girls Rules (slated for a 2020 release).

Born in Los Angeles, California, Barnet started his entertainment career off on a high note when he booked the role of Young Jack Pearson in NBC’s award-winning series This Is Us. From there, he went on to making guest appearances in everything from CBS’ Criminal Minds to Netflix’s Family Reunion. Barnet also starred as a series regular on a variety projects including Hot Seth in Turnt for Facebook Watch, Chase in the VICE Blackpills series Simi Valley, and finally as Joey in the Lifetime original movie Instakiller. Barnet’s workout regimen consists of Calisthenics and martial arts; he’s also available to share his “at home” routine with audiences as we all practice social distancing.

Nuwa’s Stir Fried Beef

When the traditional beef recipes get old and you have no idea what to cook for the day, try out Nuwa’s Stir Fried Beef recipe with delicious Asian BBQ sauce!

Ingredients:

  • 400g top sirloin steak, thinly sliced
  • 1 medium yellow zucchini, sliced on the diagonal
  • 1 medium onion, julienned
  • 1 red bell pepper, julienned
  • 1 pack mushrooms, thinly sliced
  • 1 teaspoon ginger, grated
  • 1 garlic clove, minced or pressed
  • 1/2 tablespoon sesame seeds for garnish
  • 3 tablespoons oil to be used 1 tablespoon at a time
  • Salt and pepper to taste

Ingredients for Asian BBQ Sauce:

  • 3 tablespoons original BBQ Sauce
  • 3 tablespoons Maple Syrup
  • 2 tablespoons soy sauce

Preparation:

  • Stir together the sauce ingredients and set aside.
  • Heat a large heavy pan or wok over high heat and add 1 tablespoon oil. When oil is hot, add beef in a single layer and sauté undisturbed for 2-3 minutes. Stir and sauté for another 2 minutes or until nearly cooked through. Season lightly with salt and pepper; add ginger and garlic and sauté for 1 minute.
  • Drizzle beef with around half the sauce (to taste) and stir-fry another 1 minute or until beef is fully cooked through. Remove beef to a plate and cover to keep warm. Wipe pan clean with a paper towel.
  • Place clean pan over high heat and add 1 tablespoon oil. Once oil is hot, add mushrooms, season lightly with salt and pepper and stir fry until golden (around 5 minutes). Transfer mushrooms to the plate with beef.
  • Add 1 tablespoon oil along with onion and veggies and stir fry about 8 minutes or until soft and golden.
  • Combine vegetables with beef and mushrooms, drizzle in more sauce to taste and stir fry just until hot. Serve over steamed white rice. .
