Cynthia Khalifeh in the Ramadan Series Harb Ahleya and Ded El Kasr

In a very intimate interview we did with Cynthia Khalifeh we learned so much about her role as Nadeen in Harb Ahleya and Maya in Ded El Kasr. We also got up close and personal about her past and what kind of roles she’s ready to tackle in the future.

Without further ado, here’s everything you need to know about Cynthia Khalifeh.

  • She used to physically fight with boys in school
  • She was an athlete at an early age with a plan of a future in sports, before she left everything at grade 5 and went into theater and art
  • She was born and raised by the sea in a very small town and moved to the city when she was 18. From Beirut onto the world
  • The first series she filmed when she was 18 was actually in Sharm El Sheikh, her first time ever in Egypt. It was with Amir Karara and Dina El Sherbini
Out of everything you’ve done so far, which was the show you enjoyed doing the most?

I can’t really choose one. I enjoy every role and every first experience but I’m always attached to my current project. I can say now it’s Harb Ahleya since it’s the latest and its feedback is still going on.

How do you normally prepare for a role? Any specific routine?

When I take on a new role I completely lock myself in a house away from any outer interferences. I turn off my phone and I tell all my friends that I’m on a role and I start reading and rereading because every time I read I bring out new things from the script and I understand the character better. Then, I start adding to the character from my imagination, her past, what she likes and dislikes, to give me some material to play it. I really go into details to the point of the nail polish color she would wear, this helps me be prepared for anything that comes on set.

How did you get inspired to play Nadine and Maya?

Maya is more like me, being half foreign and being closer to my age, she’s funky with braids and bangs and she dresses like me. Maya is a victim, she really fell in love with Kareem but he and his brother both played her.

On the other hand, Nadeen has victims under her. In the first few scenes I had to make the audience really hate me, I mean who can do that? It’s very hard! I also had to go out of my way with Nadeen’s wardrobe being a bit nouveau riche.

Nadeen in Harb Ahleya has everyone talking about how mean and devilish you are, do you relate to her in any way?

I know how much this character has affected people. Especially older people, now when I go to the hairdresser older ladies look at me disgustingly and I want to tell them “Guys it’s Cynthia, not Nadeen, separation!”

It was very hard for me to relate to Nadeen, the first few days I read the script I called the writer and told her I can’t do this role. I can’t find any relationship with Nadeen to be able to embody her and I can’t even bring myself to like her. Rule number one in acting is to love your character or drop it, even if it was the meanest villain in the world.

So apart from looking and sounding like Nadeen, I had to understand her motives. It was very hard for me to understand the kind of person who wants to marry an impotent, much older man just for money. Although I don’t relate to Nadeen I created a past for her that I might relate to, to be able to play her.

Do you think that this has imprinted the evil character in your fan’s minds?

I’m glad it did because this only means that I was able to deliver what was asked of me. Now it’s my turn as an actor to choose my next roles and to be able to transform this idea into a whole new fluffy, buffy, pinky one. Cynthia Khalifeh

For sure I’m imprinted in casting directors’ heads with the villain role but it’s my job to show that I can do a variety of different roles and not get stuck doing one thing.

What’s next for Cynthia?

I want a new challenge. Ever since I played Nadeen and saw how the crew would snicker and laugh during filming from how over-the-top she is, I decided I really wanted to go into comedy next. From the things I already filmed:

  • I made a guest appearance with Sharnoby in Mohamed Hefzy’s most recent film.
  • I’m in the cast of Bimbo for Amr Salama and Mohamed Hefzy. I’m very excited about this one, the crew is amazing with Huda El Mofty, Ahmed Malek and Wegz. It’s going to be on Shahid.
  • I signed with Sabah group for a cool psychological thriller filmed in Lebanon with Yasmin Raeis. I might also be a police agent for another cool thriller.

A humanitarian power like feeding the world and saving people. We throw a lot of food away every day and it’s crazy because people in some parts of the world are dying from hunger.

The aquatic biotope is the residence of dugongs, giant sea turtles, the bow mouth guitar shark, and the bullethead parrotfish. It is nothing less but a treasure trove underwater.

Other than having fun in the water, there are ways to protect the spaces you dive in. The Egyptian Red Sea is home to many endangered marine species such as whale sharks and Green Turtles and hosts some of the world’s healthiest coral reefs.

There are few simple ways a diver can help protect the Red Sea’s pristine marine life:

  1. Don’t wear sunscreen or sun tanning oils before entering the sea as the majority of them have chemicals that are toxic to corals and marine life (called Oxibenzone)
  2. Keep a 2m distance from the coral reefs to avoid touching or kicking them with your fins. They are fragile living creatures and 1 touch can kill them.
  3. If you encounter a Manta, Dolphin, Shark, Turtle or Whaleshark, give them space, don’t chase or encircle them to take a picture, let them approach you only if they feel like it.

9 Ways to Use Chocolate Chips in Your Recipes

Do you really need reasons to use chocolate chips in your recipes? Melt them, add them to your cookies and brownies or just pop ’em in your mouth and enjoy the smooth melting sensation. We cannot live without chocolate chips and we thank the heavens for the creator who invented them.

Classic Chocolate Chip Cookie Bars

Chocolate chip cookies are everyone’s favorite but these bars will be gone before the tray even cools. Perfect with a scoop of vanilla ice cream or a glass of milk.

Ingredients:

  • 2 & 1/4 cups (280g) sifted all-purpose flour
  • 1 tsp baking soda
  • 1 and 1/2 tsps cornstarch
  • 1/2 tsp salt
  • 3/4 cup (170g) unsalted butter, melted and slightly cooled
  • 1 cup (200g) light brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg plus 1 large egg yolk, at room temperature
  • 2 tsps pure vanilla extract
  • 1 cup (180g) semi-sweet chocolate chips
  • Sprinkle of sea salt (optional)

Method:

  1. Preheat oven to 350°F (177°C). Line the bottom and sides of a 9-inch square baking pan with aluminum foil or parchment, leaving extra paper on all sides to easily lift the bars out of the pan.
  2. Whisk the flour, baking soda, cornstarch, and salt together in a bowl.
  3. In another bowl, whisk the melted butter and sugars together until no brown sugar lumps remain. Whisk in the egg, egg yolk and vanilla extract. The mixture will be thick. Pour the wet ingredients into the dry ingredients and mix together until combined. The dough will be very soft, yet thick. Fold in the chocolate chips.
  4. Transfer dough to the pan and press/smooth into an even layer. Sprinkle with sea salt and some chocolate chips if desired. Bake for 32-35 minutes or until lightly browned on the sides. Insert a toothpick, if it comes out clean the bars are done.
  5. Allow the bars to cool then lift the foil out of the pan and cut into squares. Store in an airtight container at room temperature.

Chocolate Chip Banana French Toast

A good breakfast is one that contains bread, milk and banana, chocolate chips are the perfect addition to this sweet recipe.

Ingredients:

  • 3 ripe bananas
  • 4 eggs
  • 3/4 cup milk
  • 1/4 cup (1/2-stick) butter, melted
  • 4 tbsps sugar, divided
  • 1 tsp vanilla extract
  • 1 loaf toast bread
  • 1/4 cup mini semisweet chocolate chips

Method:

  1. Preheat oven to 400°F (204°C). Coat a 9×13 baking dish with cooking spray.
  2. In a bowl, mash bananas with a fork and add the eggs, milk, melted butter, 3 tablespoons sugar, and the vanilla; mix until well beaten. Add bread and toss until completely coated.
  3. Pour into the baking dish then sprinkle with chocolate chips and remaining 1 tablespoon sugar. Bake for 18 to 20 minutes, or until set and golden. Cut into squares, and serve warm.

1 Minute Chocolate Chip Cookie in a Mug

Easy-peasy lemon squeezy. In under 1 minute your chocolate chip cookie in a mug will be warm and ready to dive into. Give it a try, it literally takes 1 minute.

Ingredients:

  • 1 tbsp unsalted butter
  • 1 tbsp granulated sugar
  • 1 tbsp brown sugar
  • 1/2 tsp vanilla extract
  • 1/8 tsp pinch salt
  • 1 egg yolk
  • 3 tbsp all-purpose flour
  • 1-2 tbsp chocolate chips

Method:

  1. Microwave butter in a mug until melted. With a spoon, mix in sugars, vanilla and salt until well-combined. Mix in egg yolk until no traces of the yolk are seen. Mix in flour. Fold in chocolate chips.
  2. Microwave on high for 40 seconds, or a maximum of 50 seconds. Serve warm with a dollop of ice cream and chocolate sauce if desired.

Chocolate Chip Cheesecake Brownies

Brownies, cheesecake and chocolate chips all combined in one hell of a dessert! This one is not for the faint-hearted and requires supervision of a real sweet-tooth.

Ingredients:

Brownies

  • 8 tablespoons unsalted butter
  • 6 tablespoons bittersweet chocolate chopped
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2/3 cup all-purpose flour

Cheesecake

  • 1 cup cream cheese at room temperature
  • 1/3 cup sugar
  • 1 large egg yolk
  • 1/2 tsp pure vanilla extract
  • 1/2 cup semi-sweet chocolate chips

Method:

  1. Preheat oven to 350°F (177°C). Line a 9×9 baking pan with parchment paper and spray with baking spray.
  2. For the Brownies: Melt the butter and chocolate in a small saucepan over medium-low heat, constantly stirring until completely melted. Remove from the heat and whisk in the sugar, eggs and vanilla. Add the flour and carefully combine. Transfer to the baking pan and set aside.
  3. For the Cheesecake: In a food processor, combine the cream cheese, sugar, egg yolk, and vanilla and whip together until there are no lumps.
  4. Using a spoon, drop pieces of the cheesecake batter on top of the brownie batter. Then using a knife, swirl the two batters together until you have a marbled effect.
  5. Sprinkle with the chocolate chips and transfer to the oven and bake for 30-33 minutes.
  6. Once baked, remove from oven and let cool for at least 2 hours. (Refrigerate to speed this process up if needed)

Chocolate Chip Cookie Dough Dip

Ingredients:

  • 1 stick unsalted butter, at room temperature
  • 230g cream cheese, at room temperature
  • ¼ cup light brown sugar
  • ¾ cup confectioners’ sugar
  • 2 tsps pure vanilla extract
  • 1¼ cups mini chocolate chips

Method:

1. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter with the cream cheese and brown sugar until light and fluffy, 3 to 4 minutes.

2. Add the confectioners’ sugar and the vanilla extract and mix to combine. Stir in the chocolate chips.

3. Serve at room temperature with any biscuit of your choice for dipping. Store leftovers in an airtight container in the refrigerator for up to 3 days.

Mint Chocolate Chip Yogurt Ice Pops

Ingredients:

  • 2 cups Greek yogurt
  • 1 cup whole milk
  • 3 tbsps confectioners’ sugar
  • 1 tsp pure vanilla extract
  • ½ tsp mint extract
  • 3 or 4 drops green food coloring (optional)
  • 1 cup chocolate chunks
  • 1 cup dark chocolate chips
  • 2 tbsps coconut oil

Method:

1. In a medium bowl, mix the yogurt with the milk, confectioners’ sugar, vanilla extract, mint extract and food coloring to combine. Stir in the chocolate chunks.

2. Divide the mixture among the molds, filling each mold to about ¼ inch from the top. Insert ice-pop sticks and freeze until solid, at least 3 hours.

3. Heat the dark chocolate and coconut oil in a heat-safe bowl in the microwave in 30-second increments, stirring in between, until the mixture is smooth and melted.

4. Unmold the ice pops. Working quickly, dip each one into the melted chocolate. Store the pops in the freezer for up to two weeks.

Ingredients:

  • 2 & 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp sea salt
  • 1 cup unsalted butter at room temperature
  • 1/2 cup granulated sugar
  • 1 cup light brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 1/2 cups mini chocolate chips semi-sweet
  • 230 g cream cheese
  • 1/2 cup granulated sugar
  • 1 tsp vanilla
  • Chocolate sauce (optional)

Method:

  1. Preheat oven to 350°F (177°C). Spray 2 muffin tins with cooking spray.
  2. Whisk together flour, baking soda, and salt.
  3. In another bowl, beat butter and sugars on med-high until fluffy (2-3 mins). Reduce speed and add eggs (one at a time), and vanilla. Beat until combined.
  4. Add flour mixture and mix until combined. Fold in chocolate chips.
  5. Using a large cookie scoop (3 Tbsp), scoop dough into muffin tins.
  6. Bake for 15 mins or until lightly browned and mostly set (but not completely).
  7. Remove from oven and immediately use a small jar or container to press firmly down in the center to create a well. Allow to cool completely.
  8. Beat cream cheese, sugar and vanilla until smooth then pipe into cooled cookie cups. Top with chocolate sauce or extra chocolate chips if desired. Serve cold and eat within 2-3 days or freeze for up to 4 weeks.

Potato Chip Chocolate Chip Blondies

Ingredients:

  • 2 & 1/8 cups all-purpose flour
  • 3/4 tsp sea salt
  • 1/2 tsp baking soda
  • 3/4 cup melted butter at room temperature
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs at room temperature
  • 2 tsps vanilla extract
  • 1 & 1/4 cups semi-sweet chocolate chips
  • 1 & 1/4 cups any wavy potato chips, chopped
  • 1/4 cup additional potato chips and a sprinkle of sea salt (optional)

Method:

  1. Preheat oven to 350°F (177°C). Spray a 9×13-inch baking pan with cooking spray.
  2. Whisk together flour, salt, and baking soda. Set aside. In the bowl of a stand mixer, mix melted butter and sugars together until combined. Add eggs and vanilla and mix until smooth. Slowly add dry ingredients and mix on low, just until combined.
  3. Stir in the chocolate chips and potato chips.
  4. Pour dough into the pan, smoothing the top with the spatula. Add additional chips to the top and sprinkle lightly with sea salt.
  5. Bake for 28–30 minutes or until the top is light golden brown and the edges start to pull away from the pan. Remove from oven and cool to room temperature.
  6. Cut into squares and serve.

Caramel Nut Bars

A nut bar is not proper if it doesn’t have caramel and chocolate chips. This chocolate chips recipe is great for an in-between meals snack or a dessert after dinner.

Ingredients:

  • 1 cup quick-cooking oats
  • 1 cup packed brown sugar
  • 1 cup all-purpose flour
  • 3/4 cup butter, melted
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 package (14 ounces) caramels
  • 1/3 cup milk
  • 1 cup semisweet chocolate chips
  • 1/2 cup chopped walnuts

Method:

  1. In a large bowl, combine the first six ingredients until crumbly; sprinkle 1 cup into a greased 13×9 inch baking pan (do not press).
  2. Bake at 350°F (177°C) for 10 minutes. In a small heavy saucepan, cook and stir caramels and milk until caramels are melted.
  3. Pour over crust. Top with chocolate chips and nuts. Sprinkle with remaining oat mixture. Bake at 350° for another 10 minutes. Cool and refrigerate until set.

International Hummus Day is the day we celebrate one of the greatest ingredients we use in many of our recipes. Being a rich source of vitamins, minerals and fiber, Hummus can be made into a salad, dip, sandwich, wrap, quesadilla or cake! Find some easy recipes for chickpeas to make at home.

Chickpea and Apple Salad

Make this classic lunch favorite vegetarian that is refreshing, crunchy and full of flavor, this easy salad recipe is ready in just 20 minutes.

Ingredients:

  • 4 spring onions, chopped
  • 2 celery sticks, sliced 
  • 2 green apples, diced
  • 2 tbsp raisins
  • 400g chickpeas, rinsed and drained
  • ½ a bunch coriander, chopped
  • Lettuce, leaves separated

For the dressing:

  • 2 tsps curry paste (any Indian one will work) 
  • 2 tbsps mango chutney 
  • 3 tbsp greek yogurt
  • 1 lime, juiced

Method:

  1. Mix all the salad ingredients, except the lettuce leaves (and reserve some coriander for garnishing), and toss with some seasoning.
  2. Mix together the dressing ingredients until well combined then add.
  3. Arrange the lettuce leaves on a plate and pile the salad on top.
  4. Finish by sprinkling over the rest of the coriander.

Chickpea Avocado Toast

This simple avocado chickpeas on toast is the perfect breakfast or lunch filled with all the nutrients, energy and flavor that you need to continue your day.

Ingredients:

  • Chickpeas 400g, drained and rinsed
  • 1 tsp toasted sesame oil 
  • 1 lemon, ½ juiced, ½ wedged to serve
  • 1 large avocado
  • 4 small crusty wholemeal or rye bread, thick slices, toasted
  • Extra sesame seeds for garnish
  • 1 spring onion, finely sliced
  • Chili paste (Optional)

Method:

  1. Put the chickpeas, sesame oil, lemon juice and some seasoning in a bowl. Use a potato masher to crush everything together until you have a rough paste.
  2. Spoon the avocado into another bowl and break up with a fork until roughly crushed. Fold the avocado through the chickpeas, then spread over the bread. Sprinkle with the sesame seeds and sliced spring onions. Serve with lemon wedges and chili paste if desired.

Hummus Veggie Wrap

Hummus recipesNothing could be easier or more nutritious than a yummy hummus and veggie wrap, every vegetarian’s dream.

Ingredients:

  • 4 tortillas or Shami bread
  • 1 cup hummus
  • ½ cucumber
  • 2 small tomatoes, sliced
  • 1 avocado, sliced into thin slices
  • 1 yellow bell pepper, sliced into thin slices
  • 1 carrot, julienned
  • 1 cup mixed salad greens
  • 4 tsps hot sauce or sriracha (optional)

Method:

  1. Warm up the tortillas or Shami bread in a microwave for 10 seconds.
  2. Spread about 4 tablespoons of hummus
  3. Layer the sliced cucumber, tomato, avocado, bell pepper, and carrot.
  4. Top with mixed salad leaves and drizzle with sriracha hot sauce.
  5. Wrap up the tortillas tightly in a burrito shape, cut in the middle, and serve.

Hummus Quesadillas

Hummus recipesCheese quesadillas are amazing but have you tried replacing cheese with Hummus? For a healthy dairy-free and delicious meal, try these hummus quesadillas.

Ingredients:

  • One whole-grain tortilla (or regular tortilla)
  • ¼ cup hummus
  • Spinach sautéed in olive oil
  • Sun-dried tomatoes
  • Kalamata olives
  • Extra-virgin olive oil, for brushing
  • Additional hummus, hot sauce or pesto (optional, for serving)

Method:

  1. Spread hummus generously over your tortilla. Lightly cover one-half of the tortilla with the fillings. Fold the blank half over to create a half-moon shape.
  2. Warm a medium skillet over medium heat. Place the folded quesadilla(s) in the pan. Let the bottom sides warm up for a minute or two, then carefully flip. Brush the warm sides lightly with olive oil and let cook in the pan for another minute or two.
  3. Carefully flip once again, brush the new top side lightly with olive oil, and cook until the bottom is golden and crisp. Cook until both sides are lightly golden and crisp.
  4. Transfer the quesadilla to a cutting board and use a sharp knife or pizza cutter to slice it into three wedges. Serve immediately. Add some additional hummus on the side, or perhaps some hot sauce or a dab of pesto. (optional)

Spiced Hummus Cake with Vanilla Yogurt Frosting

Ingredients:
For the cake:
  • 1 cup all-purpose flour
  • ¾ cup whole wheat flour
  • 2 tsp ground cinnamon
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 2 large egg whites, lightly beaten
  • ½ cup hummus
  • 1 tbsp vanilla extract
  • 2/3 cup brown sugar
  • 2 tbsp nonfat greek yogurt
  • ½ cup nonfat milk
For the frosting:
  • 2 cups nonfat greek yogurt
  • 100 gm instant vanilla pudding mix
  • 3 tbsp powdered sugar

Method:

  1. Preheat the oven to 350° (177°C). Line a cake pan with wax paper, and lightly coat with nonstick cooking spray.
  2. In a bowl, whisk together the flours, cinnamon, baking powder, and baking soda. In a separate bowl, whisk together the egg whites, hummus, and vanilla extract. Stir in the brown sugar and yogurt, smearing out any clumps along the side of the bowl.
  3. Alternate between adding the flour mixture and milk to the egg mixture, stirring just until incorporated. (For best results, add the flour mixture in 3 equal parts and the milk in 2 equal parts.)
  4. Spread the batter into the pan. Bake for 16-18 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes before inverting, peeling off the wax paper, and cooling completely on wire racks.
  5. For the frosting, beat the yogurt, pudding mix, and sugar for 1-2 minutes, or until thickened. Chill for at least 2 hours before frosting the cake. (If chilling longer than 2 hours, cover the bowl with foil or plastic wrap to prevent the top from drying out).
