Coconut Curry Pumpkin Soup

Coconut curry pumpkin soup is a bowl of comfort with a kick. This soup comes together in less than 30 minutes using a handful of ingredients!

Ingredients:

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves of garlic, minced or pressed
  • 1 teaspoon ginger, minced
  • 1 tablespoon mild curry powder
  • ½ teaspoon garam masala spice blend
  • 3 cups vegetable stock
  • 1 (14 ounce) can coconut milk
  • 3 cups pumpkin (or butternut squash) puree
  • salt and ground black pepper, to taste
  • toasted pumpkin seeds and cilantro for topping (optional)

Instructions:

  1. Heat olive oil over medium heat. Add onion and saute for 4 mins until soft and translucent. Add garlic and ginger and cook for 1 min until fragrant. Thanksgiving Dishes
  2. Stir in curry powder and garam masala, then add vegetable stock, coconut milk, and pumpkin and bring to a boil. Reduce the heat to low and simmer for approximately 20 minutes, covered. Season with salt and pepper, to taste. Puree the soup until smooth.
  3. Serve soup with a drizzle of coconut milk and toasted pumpkin seeds and cilantro.

Butternut Squash Salad

Thanksgiving DishesButternut squash salad is a light meal that’s loaded with fall flavors and colors. You’ll enjoy its crispy fresh ingredients all pulled together with a light dressing.

Ingredients:

  • ½ large butternut squash, cut into ½-inch cubes (4 cups)
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon salt and ¼ teaspoon black pepper
  • 1 (5 oz.) package baby kale
  • 1 medium apple, cut into ½ inch pieces
  • ½ cup pomegranate
  • ¼ cup feta cheese, crumbled
  • ½ cup pepitas (no shell pumpkin seeds), toasted

Apple Cider Vinaigrette:

  • 2 tablespoons apple cider vinegar
  • ¼ cup olive oil
  • ½ tablespoon Dijon mustard
  • ½ teaspoon salt and ¼ teaspoon ground black pepper

Instructions:

  1. Preheat oven to 400 F. In a large mixing bowl, toss together butternut squash, olive oil, Italian seasoning, garlic powder, salt, and pepper. Transfer to a baking pan and roast for 30 mins until tender.
  2. In a large bowl, combine baby kale, roasted butternut squash, apple, pomegranate seeds, feta cheese, and toasted pepitas. Thanksgiving Dishes
  3. In a small mixing bowl, whisk together vinegar, olive oil, mustard, salt and pepper.
  4. Pour dressing over salad and toss to combine.

 

Cauliflower Mashed Potatoes

If you’re a fan of creamy mashed potatoes, you’ll love this recipe! You can’t taste the cauliflower, but it makes these mashed potatoes extra fluffy, smooth, and light.

Ingredients:
  • 3-4 cloves of roasted garlic (see notes)
  • 2 pounds Yukon gold potatoes
  • 1 (1-pound) cauliflower head, broken into a few large pieces
  • 1 tablespoon minced rosemary
  • 4-6 tablespoons olive oil (or butter/vegan butter)
  • Salt & pepper
  • Reserve some starchy potato water
Instructions:
  1. Drizzle garlic cloves with olive oil and salt and bake at 350F until soft (15 mins).
  2. Bring a large pot of salted water to a boil. Add the potatoes and the cauliflower and boil until knife-tender (15 to 25 mins). In a food processor, puree the cauliflower with roasted garlic, 2 tbsp of olive oil, rosemary, and a few pinches of salt and pepper.
  3. When the potatoes are soft, remove them from the pot. Peel and mash them. Add 2 tbsps of olive oil, then stir with the cauliflower puree until smooth and creamy.
  4. If necessary, add ¼ cup (or so) of hot starchy potato water to help it out. Taste and adjust seasonings, adding more olive oil, salt, pepper, and/or rosemary to taste.

Creamed Spinach

This easy creamy spinach is the perfect side to any dish and the perk is, you can make it ahead and reheat it any time.

Ingredients:

  • 1 + ½ lb. fresh spinach (3 bunches), stems removed
  • 2 tbsp butter
  • 1 small onion, diced
  • 1 tbsp garlic, minced
  • ½ tbsp all-purpose flour (or cornstarch)
  • 1 + ½ cups heavy cream
  • ¼ cup Parmesan cheese, grated
  • 1 tsp salt (or to taste) and ½ tsp ground black pepper

Instructions:

    1. Cut fresh spinach in half and cook in a large pot of boiling water for 30 seconds until wilted. Rinse the spinach under running cold water until cool. Drain and squeeze out excess water. Set aside.
    2. In a large skillet, melt butter over medium-high heat until it turns bubbly, about 1-2 mins. Sauté onion and garlic until fragrant, 2 mins. Add flour and stir well to combine. Stir in heavy cream and Parmesan. Thanksgiving Dishes
    3. Turn the heat down to medium. Bring the mixture to a simmer until smooth and thickened, 5 mins. Season with salt and pepper to taste.
    4. Stir in spinach and cook for 1-2 mins until heated through. Serve warm with extra Parmesan on top.

Honey Roasted Carrots

Thanksgiving DishesHoney roasted carrots are a sweet, savory, and salty side dish that pairs well with almost any entree. With all these flavors in one dish, everyone will want seconds.

Ingredients:

  • 1 lb. baby carrots (2 bunches), rinsed, peeled, and tops trimmed 
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • ¼ teaspoon salt and ⅛ teaspoon ground black pepper
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat oven to 400 F. Line a baking pan with parchment paper and place carrots.
  2. In a small bowl, combine olive oil, honey, salt, pepper, pour over the carrots and toss to combine. Arrange carrots in a single layer and place the pan into the oven.
  3. Bake for 25-35 mins until tender. Note that thick carrots will need more time.
  4. Garnish with fresh parsley. Thanksgiving Dishes

Crispy Leaf Potatoes

Layers upon layers of buttery crispy potatoes are just what you need as a dish to side any main course. You can dip it in sauce, eat it with gravy or even just as it is.

Ingredients:

  • 1 bag (5 lb.) medium potatoes
  • 2 tbsp olive oil, divided
  • ¼ cup unsalted butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tbsp salt and 1 tsp ground black pepper (or to taste)
  • fresh parsley, chopped (optional, for serving)
  • parmesan cheese, grated (optional, for serving)

Instructions:

    1. Preheat oven to 400F. Thinly slice the potatoes (peeled or unpeeled) and pat them dry with a paper towel.
    2. Transfer the sliced potatoes into a bowl and add 1 tbsp olive oil, melted butter, Italian seasoning, garlic powder, salt and pepper. Toss to coat evenly.
    3. Arrange the potatoes upright in a casserole pan and brush the top with the remaining 1 tbsp olive oil. This helps the top get even more crispy.
    4. Bake for 1 hour and 20 mins until golden brown.
    5. Top with parsley and parmesan cheese and serve immediately.

Pesto Green Beans

Ingredients:

  • 1.5 lbs. green beans, washed and trimmed
  • 2 tablespoons unsalted butter
  • ¼ cup walnuts, chopped
  • ½ cup basil pesto
  • ½ tablespoon balsamic vinegar
  • ½ teaspoon salt and ¼ teaspoon ground black pepper (or to taste)

Instructions:

  1. Bring a large pot of salted water to a boil. Add green beans and cook for 3-4 mins, until bright green and slightly tender. Drain and rinse with cold water to cool.
  2. Melt butter in a skillet over medium-high heat. Add walnuts and cook until golden brown, about 3-4 mins. Stir in pesto and balsamic vinegar until evenly combined.
  3. Add green beans and toss to coat and warm through, about 1-2 mins. Season with salt and pepper to taste and serve immediately with extra spoonfuls of pesto on top.

Sweet Potato Casserole with Pecans

This sweet potato casserole with pecans recipe is packed with tender sweet potatoes and a buttery crunchy pecan topping, the best dessert on a cold day.

Ingredients: 

  • 4 medium sweet potatoes
  • ½ cup heavy cream
  • ½ cup butter at room temperature
  • 2 eggs
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt

Pecan Topping:

  • 1 + ½ cup pecans, finely chopped
  • ¼ cup butter at room temperature
  • ⅓ cup granulated sugar
  • ½ cup all-purpose flour

Instructions:

  1. Preheat oven to 350 degrees F. Poke a fork into the sweet potatoes to make a few vents, place on a lined baking sheet and bake for 1 hour until completely soft inside.
  2. Cut the sweet potatoes in half and scoop out the flesh into a large bowl. Add heavy cream, butter, eggs, sugar, vanilla extract and salt. Mix with a hand mixer for 1-2 mins until smooth.
  3. Transfer the mixture into a square baking dish. Gently tap the baking dish on the counter a few times to release any air bubbles and spread the mixture evenly.
  4. In another large bowl, combine pecans, softened butter, flour and sugar. Use your fingers to rub the butter into the flour until the mixture resembles coarse breadcrumbs.
  5. Spread the mixture evenly over the top of the sweet potatoes with a spoon.
  6. Bake the casserole at 350 F for 35-40 mins until golden brown on top.
  7. Set it aside to cool for 10-15 mins before serving.

Starting with an art exhibition in collaboration with ArtTalks, Volvo Gallery is set to host a variety of cultural events that will promote the Volvo brand’s philosophy and Swedish culture to a wider public audience.

Ezz Elarab Automotive Group, the sole importer of Volvo in Egypt, hosted a Fine Arts Exhibition for more than two weeks at its recently launched Volvo Gallery in collaboration with “ArtTalks”.

The venue of the event is one of Volvo’s new and innovative marketing concepts, which combines a showroom and cafe into a single destination that is designed to immerse visitors in a unique and luxurious Swedish atmosphere.

Eng. Muhammad Aboul Nour, General Manager of Volvo Egypt at Ezz Elarab Automotive Group, said: “We are delighted to host this important art exhibition in cooperation with one of the most prominent Egyptian galleries specialized in contemporary art.

This exhibition was an ideal opportunity for us to showcase the Volvo brand and its innate Swedish culture and values”. “Furthermore, our goal with Volvo Gallery is to get closer to our customers and provide them with a unique and distinctive experience to give them a taste of Sweden”.

“ArtTalks” is considered one of the most important Egyptian exhibitions for contemporary art. It was founded in 2009 by Faten Mostafa Kanafani, a lecturer and art historian whose research focuses on Egyptian modernity.

She has published in media outlets such as Mada Masr, Al-Ahram, and Rawi magazine, and was selected among 38 current Egyptian female achievers to contribute to the publication of “Daughters of the Nile: Egyptian Women Changing Their World”. The exhibition hosted at Volvo Gallery showcased the art works of some of Egypt’s most prominent talents, including Ahmed Osman, Ahmed Senbel, Jamal Bassiouni, Riham ElSadany, Hassan El Akhrass, Mahmoud Ashour, Mohamed Eid, Shady Hamed, Mahmoud Marei, Walid Jahin and Ahmed El Kutt.

While Expo 2020 Dubai’s theme is, Connecting Minds, Creating the Future, its subthemes—which help anchor the big picture—are opportunity, mobility, and sustainability. Expo 2020 has undergone a sustainability strategy structured to integrate, impact and inspire.

Firstly, Expo 2020 Dubai integrates sustainability in its entire framework, thanks to their efforts in making Expo 2020 Dubai as green as possible through sustainable operations, partners, and pledges like Planet Over Plastic that encourage the stakeholders to minimize single-use plastics at their pavilions.

Then, the aim is to create a meaningful impact that exceeds the borders of the Expo 2020 Dubai site and the timeline of the event by aligning its sustainable contribution with the United Nation’s SDGs (Sustainable Development Goals). And in turn, inspire visitors and attendees to become part of the journey towards a better and sustainable future by engaging with the international community.

Terra is the official sustainability pavilion on the Expo 2020 Dubai site with 18 surrounding energy trees. Terra is Platinum LEED-certified, which means it allocated the highest possible rating under the US Green Building Council’s Leadership in Energy and Environment Design for its cost-saving sustainable architecture and efficiency. KPIs: Reduce energy demand in buildings by 20% in comparison to international standards.

Public Realm

Expo 2020 DubaiSUSTAINABILITY OBJECTIVES: Create people-centric, comfortable and walkable spaces, supporting Expo 2020’s sustainable legacy.

KPIs: Provide shading for 75% of primary walkways in Thematic Districts at the midday peak.

Provide shading for 60% of hard landscaping areas and public open spaces at the midday peak

Ecology

SUSTAINABILITY OBJECTIVES: Enhance the ecological value of the site, protecting and promoting biodiversity and local species.

KPIs: Ensure 50% of landscape plants (during Expo 2020) and 95% of landscape plants (post-Expo 2020 Dubai) are native and adaptive species.

Ensure 95% of landscape area is managed without the use of chemical pesticides, herbicides, or fertilizers.

Water

SUSTAINABILITY OBJECTIVES: Reduce the demand of potable water systems by applying a water efficiency hierarchy, followed by the substitution of potable water with non-potable supplies.

KPIs: Reduce water demand in buildings by 40% in comparison to local standards.

Recycled water is used for 100% of non-potable applications (e.g. irrigation, cooling).

Collect and use 95% of condensate water recovered from buildings 

Materials

SUSTAINABILITY OBJECTIVES: Minimise depletion of natural resources through design for reuse and legacy. Expo 2020 Dubai’s Sustainable Materials Guidelines and the RISE Guidelines for Sustainable Operations provide guidance on the selection of appropriate materials

KPIs: 90% of materials used in permanent construction to be retained for the legacy phase, District 2020. 90% of selected materials are procured in accordance with Sustainable Materials Guidelines.

Waste

Expo 2020 DubaiSUSTAINABILITY OBJECTIVES: Minimise the amount of waste produced throughout all stages of design, construction, and operation; minimise the amount of waste that goes to landfill by incorporating a circular economy approach; reduce the use of single-use products and packaging; and plan for a sustainable legacy transition.

KPIs: A minimum of 85% (by weight) of waste segregated into different waste streams during construction, operation and decommissioning to allow for diversion from landfill. 

Carbon

SUSTAINABILITY OBJECTIVES: Ensure carbon emissions at Expo 2020 are accurately measured and minimized, with unavoidable emissions managed in responsible manner through appropriate offsetting programs.

KPIs: Fully implement a greenhouse gas (GHG) mitigation and offsetting strategy.

Sustainability Certification

SUSTAINABILITY OBJECTIVES: Demonstrate global leadership, innovation, environmental stewardship, and social responsibility by achieving high levels of third party green building and site certification.

KPIs: Achieve ‘LEED Gold’ certification for all permanent buildings at Expo 2020.

Achieve CEEQUAL ‘Excellent’ certification for permanent Expo infrastructure projects.

Sustainability Operations & Reporting

The meal plan

Forget about having a tuck box to sate your sugar cravings. You won’t need it! Food portions and ingredients are healthy at Squad 101 and nutritionally balanced to meet the demands of a physically active program.

And it tastes so good you can hardly believe it is calorie-controlled. Participants can enjoy anything on the diverse and temptingly curated Michelin-quality menu, but consumption of any unapproved foods or beverages is strictly forbidden. Why would you want to sabotage all that hard work anyway?

Wellbeing comes uppermost

Your trainers are there to ensure that you stay hydrated and avoid risk of injuries. Any medical conditions will be taken into consideration and exercise plans modified accordingly.

They are experienced professionals who really do care about ensuring your safety and health while you strive to reach your goals. Trust them, they have kind hearts underneath those tough exteriors.

What to expect in a one week stay

From the minute you arrive, each minute is used to the max. From the gracious welcome from the courteous professional staff, followed by your measurements being taken, body analysis and a tour of the camp. Not a moment passes without you feeling pampered and catered to, with helpful staff at hand to meet any need.

Then, on to a welcome workout. Dinnertime follows, with a chance to meet your other squad team members, with a maximum of 30 in the camp at any time, split into teams according to fitness levels.

  • Early to bed, in order to rise bright and early for a sunrise workout and farm hike through the beautiful surroundings.
  • A spinning or body-weighted circuit will help you work up an appetite for a healthy breakfast.
  • The typical day would be a mix of activities like metabolism conditioning, boxercise, body combat, battlefield laser laser-tag, and truly grueling signature obstacle courses. All interspersed with enjoyable workshops on nutrition and other related topics, cookery classes and more chilled types of stretching and relaxation exercises.
  • Post-dinner hours are for personal time, after the luxurious option of indulging in a sauna, Jacuzzi or massage.
  • After that, the odds are that you will be happy to tumble into bed and fall asleep the second your head hits that pillow.
