Sho.ku.ku at Mazeej Hotel, Hacienda White

We had the pleasure of sitting with Chef Wesam Masoud and sampling the spectacular menu he has devised for Sho.ku.ku. While the restaurant was not officially opened when we visited, we were generously afforded a sneak peek at the menu. Sho.ku.ku’s cuisine is Egyptian comfort food with a twist and an infusion of international cuisines and flavors. Building on the concept of  “weird being the new normal”, Chef Masoud adds a surprise element in most of his dishes. We found the result wonderfully delicious during our exclusive tasting.

Dishes Sampled

We started with the Mazeej Foul, a mix between shakshouka and Alexandrian foul. The beans were seasoned with garlic powder, dry coriander, cumin, tahini and sesame seeds with a soft boiled egg in the middle of the dish. This is a beautifully presented and seasoned plate of really good foul!

Next came the magnificent Halloumi Mutabbal, dressed with fresh and dry coriander, lemon juice, olive oil, sumac, black pepper, cumin, and a surprise element: roasted ground walnuts. Despite the complexity of ingredients, the dish is very fresh, and the combination of flavors is delicious! The Arugula and Quinoa Salad arrived quickly after, a twist on a classic baladi salad by adding quinoa and red onions rubbed with sumac. The result was tart and sweet, with fresh lemon juice and arugula adding the peppery flavor. The raisins add in a sweet factor, which is Chef Masoud’s “weird” twist on a classic.

Next came the Fried Besara Croquettes; a vibrant, refreshing and well-made dish comprising of three fried croquette balls of green besara and chickpeas. The Roomi Saganaki was a block of cheese dipped in flour and fried in a small pan with white truffle honey, nigella seeds and black pepper. Originally a Greek dish, Saganaki is usually served with freshly baked bread. The theme of the dishes began to move up the map and enter the territory of Alexandrian food, which we love! Based on El Falah’s kebda came the Chicken Livers and Lemon Tasha, moist chicken liver cooked with Egyptian “tasha” and lemon juice. Though traditionally made with ghee, this tasha was made with butter, crushed garlic and dry coriander.

The Veal Schnitzel, inspired by the Italian 2 Michelin star chef Davide Scabin, arrived cooked to order – medium rare. The breading included anise to give the crust a unique flavor. We worked our way to the Stuffed Calamari next, making good use of the fresh Mediterranean catch. Chef Masoud takes traditional Egyptian mahshy stuffing, adds some shrimp and uses it to stuff the calamari. He then cooks it in marinara sauce with big shell pasta to give some heft and weight to the dish. Who knew that both Egyptian and Italian comfort food could be combined in one dish that is very enjoyable?

 

Saving the best for last, we were served the Kabsa Gamberetto, a Saudi dish with a seafood twist. Basmati rice infused with turmeric, cloves, cinnamon, nutmeg and saffron with shrimps and finished off with fried onions like Egyptian koshari. The combination of flavors was just heavenly, with a little bit of Indian and Persian influence present as well.

To satisfy our sweet tooth, the Sesame and Date French toast capped the meal. Two pieces of soft French toast nestling pieces of sukkary dates, and a tiny bit of butter to break down the dates. Instead of maple syrup, the toast was coated with reduced molasses with tahini and a tiny bit of milk.

WHAT HAPPENS WHEN YOU COMBINE ALL THREE!

All the three sports will strengthen all the muscle groups in your body. Swimming strengthens your upper body while cycling and running help you build lower body strength. You will develop lean muscles, build strength and tone your entire body.

It will make you fitter than you’ve ever been in your life. All three sports also burn huge amounts of fat from every area of your body, helping to sculpt your body. Swimming creates definition in your upper body and improves flexibility, while running develops long and lean muscles, leaving cycling to tone the lower body while building strength

HOW TO INCREASE YOUR STAMINA TO TRIATHLETE LEVELS

You can increase your running level to reach a triathlete level through routine. The best way is to start with a run of 30 minutes a day, and increase your intensity of speed over the 30 minutes. You need to carefully select your running shoes to avoid damaging the joints and risking lower back pain. Go to a reputable sports shoe retailer and give them an idea of your running routine and they can make recommendations. Or just search online for the best running shoe in 2019. Your running shoes should be a quarter to a half size larger than your normal shoe size.

As for cycling, you first need to start with a professional coach to teach you how to ride safely outdoors. Cycling shops in Egypt have professional cycling gear, so you can buy a road bike first before going for a tri bike. The most important thing to ensure you enjoy your cycling training is to invest in cycling shorts with a pad or a seat pad. You could start with indoor cycling sessions at 45 minutes of low intensity and then you can build up with interval training. With outdoor cycling, go for a flat ride of 40 minutes, 4 or 5 times a week.

For the swimming, start with swim gear. A hand paddle-board and small fins can improve your swimming style. Swim for 20 minutes, with generous breaks at each end of the pool. To begin, commit yourself to three times a week, 30 minutes per workout. Try swimming for as much of that time as you can, and count your laps. You should be able to cover anywhere from 20 to 30 laps, at least. If you are capable of doing more, you should be swimming for longer periods of time, perhaps 45 minutes or even an hour. Eventually, you will be able to swim up to an hour, or up to 3,000 meters (two miles). That should be your goal.

TIPS & POINTERS

For me the basic and most important thing is for all triathletes to develop “core muscles”. When the core is perfect you will have no difficulty with all triathlon distances and you should have built up muscular strength to help you to achieve a good time in races while remaining safe from injuries.

And absolutely important, hydration! As triathletes, we need from 8-12 glasses of water per day. At least four hours before a triathlon or other endurance activity, drink 1 ounce of fluid for every 10 pounds of body weight (or 5-7ml/kg) to start the event well-hydrated. Don’t experiment with new beverages before or during a competition. Eat lean protein within 45 minutes of a workout. Fill up on fruits and vegetables, and load a third of your plate with complex carbohydrates. Stoke your metabolism with a good breakfast, hydrate with water and sports drinks and skip fried foods. Beware of energy drinks and energy bars.

Crave: Beat the Heat with a Cool Drink!

As you lose water to dehydration, your body temperature rises, so replacing fluids is essential to keeping cool. Avoid beverages that contain alcohol, caffeine, or lots of sugar as they cause dehydration. Opt instead for hydrating foods like salads and fruits. Mojito syrup

Mix 1 cup water with 1 cup sugar in a saucepan and heat until boiling.

Stir until the sugar dissolves (about a minute). Then turn off the heat. Toss in a handful of mint leaves and let it steep (just sit there off the heat) for an hour or so. Strain out the leaves.

Summer time is a time for fun and relaxation for most people. But for seniors, who have a higher sensitivity to heat, a little more caution needs to be exercised to avoid any health problems. Older people are at significant increased risk of heat-related illnesses (collectively called hyperthermia) during the summer months. Hyperthermia ranges from mild conditions, such as a rash or cramps, to serious and potentially life-threatening conditions such as heatstroke.

Factors that increase the risk of hyperthermia in elderly people include:

  • Age-related changes such as poor blood circulation and inefficient sweat glands.
  • Heart, lung, and kidney diseases, as well as any illness that causes general weakness or fever.
  • High blood pressure or other conditions that require changes in diet, such as salt-restricted diets.
  • Certain medications such as diuretics, sedatives, tranquilizers, and certain heart and blood pressure drugs which can hinder the body’s ability to regulate temperature.
  • Taking several drugs for various conditions, (it is important, however, to continue to take prescribed medication and discuss possible problems with a physician.)
  • Living alone: some older people are frail or have reduced mobility or have a mental illness which makes it difficult to take adequate care of themselves in hot weather, and they may ignore symptoms of hyperthermia.

To reduce risk of hyperthermia, remember to:

  1. Stay hydrated

Your feeling of thirst often decreases as you age. So don’t wait until you are thirsty to drink. By the time you feel thirsty, you may already be dehydrated. Aim to drink 6 to 8 cups of water a day. If you intend to spend much time out in the sun, you may want to aim for a higher number of cups to avoid dehydration. If you have a kidney condition, you need to talk to your doctor before you increase the amount of fluid you drink.

Avoid drinks containing alcohol or caffeine as they increase the water excretion from the body.

  1. Stay cool

Draw your blinds and curtains, and turn on your air conditioner. Try to limit your outdoor activities and stay in the shade. You don’t always feel the effect the sun is having on you in the moment.

Taking tepid (not too cold or too hot) showers can help you cool down. If not easy, you can wet washcloths or towels with cool water and put them on your wrists, ankles, armpits, and neck.

  1. Dress lightly

Whenever you can, wear loose, light-colored clothes (dark-colored clothes absorb heat). Top it off with a lightweight, broad-brimmed hat

If you are travelling for a summer vacation, additional precautions are needed:

  • If you are travelling by car, stop for a rest at least every two hours. Frequent leg movement is important to avoid stagnation of blood in the lower extremities which can cause heaviness, swelling and increased risk of blood clots.
  • Make sure you have essentials :
  • A sufficient supply of your medications in a secure pillbox.
  • Sun protection items such as sunscreen and a hat
  • First-aid kit
  • Emergency numbers
  • Know medical facilities at your destination.

Dishes Sampled

We started with a selection of the classic appetizers: Crispy Salmon Salad, super crispy, lightly breaded salmon, slightly spicy, was served with soy sauce on the side, a delightful option to start your meal with.  Followed by Salmon Scallop Carpaccio, another light starter, served ultra-fresh. This duo was drizzled with a good amount of lemon and olive oil and garnished with a delicate, aromatic vinaigrette.  Our Sashimi Boat was filled with tiny bites of salmon, shrimp and crab sashimi garnished with cubes of avocado and red caviar. This was just a small sample of their finest Japanese selection. Then came the Sea Shell Risotto, a set of three seashells stuffed with different types of risotto: scallop, pesto, zucchini, shrimp saffron and salmon cherry tomatoes. The portions were just right and the presentation was rather elegant. It was a good option to share, as risotto can be quite a filling, heavy dish. Finally, the Sea Bass Quinoa was one of the highlights of our evening. Crispy skin, moist and flaky flesh, on a bed of quinoa salad and ruccola; all doused with balsamic dressing. This dish was a real summer dinner treat.

Décor & Ambience

The Smokery Beach is a spacious, mainly open-air venue, with ample seating arrangements between regular and high tables distributed throughout the main lounge. White canopies give shade to the side tables. Huge plant vases decorate the interior, adding touches of greenery to the sandy, beach atmosphere.
