Summer is coming to an end it’s time for kids to head back to school. You know what that means: time to start thinking about school lunches. Here’s one idea that is sure to make your kiddos happy and make preparation easy for mom and dad as well!

This recipe freezes as well so you’ll always have something ready when there’s no time, or energy, to make a lunchbox.

Lunchbox Burgers

Ingredients:

  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon salt
  • ½ kg ground chuck beef
  • 2 to 3 tablespoons mayonnaise

Preparation:

  • If using an oven, preheat the oven to 120oC, if using a griddle, preheat to 180o
  • Combine the onion powder, garlic powder, pepper, and salt in a small bowl. Set aside.
  • Line a sheet pan with parchment paper, and place the ground chuck beef in the middle of the pan. Cover the meat with a large sheet of plastic wrap. Roll meat with a rolling pin until it covers the surface of the pan; remove the plastic wrap, and sprinkle the meat with the seasoning mixture.
  • Fold the meat in half, from side to side, using the parchment paper. Cut the meat into 8 even squares and place on the griddle to cook for 2 to 3 minutes per side.
  • Once the burgers are done, leave out to cool. Once completely cool, you can place in sealable sandwich bags or in an airtight container and place in the freezer.
  • When making the lunchbox, take out the burger to thaw from the night before, warm it up in the microwave and place inside a burger bun.
  • Put a slice of tomato and lettuce in the lunchbox, along with a piece of cheese so that your little one can easily build their burger.
